Microwave Corn on the Cob

I love food that is delicious AND easy! You can also do this by putting the corn (husked) in a big ziplock with a few tablespoons of water. Don't seal it (obviously). Mmmm.

I was worried about the crust on this one, but it turned out great. My family really enjoyed this recipe. The only substitution I was made was ground turkey for the beef. We really enjoyed it and we will fix this again and again!

Sparkling Holiday Jam

Reviewed: Mar. 5, 2009
This was really thin when I put it in the jars & I was afraid it wouldn't set, but it turned out great. I used some glass jars & some plastic. I boiled the glass ones full of jam like the recipe says, but didn't boil the plastic & they still turned out fine. Added orange zest & juice of one orange. This is by far one of the best jams I've had! Not too sweet, but plenty of flavor & texture. I made toast at 9 pm last night just to try it out!

Crispy Orange Roughy

Reviewed: Feb. 22, 2009
I did as other reviewers recommended and only lightly coated the fish with potato flakes and this came out pretty good. A little bland, but we ate it with cocktail sauce and it was satisfying. Used flounder cuz that's what I had on hand. Will make again because it was very quick and easy.

Three Ingredient Peanut Butter Cookies

Reviewed: Feb. 11, 2009
They are ok. I let them just barely brown around the edges - while still warm the centers were almost liquid which was a bit off-putting, but once they cooled completely they were chewy in the middle. Much better. I sprinkled sugar on the tops while they were still warm because I thought they needed it. Will make again just because they took about 15 minutes start to finish and the flavors were enjoyable. Just not the best.

This could be bad. I have finally found a cookie that I can make! And they're delicious - as in, I can't stop eating them. Hence, this could be bad. I followed the recipe to a T and they are perfect. I possibly made them too large because I came out with 29 but they still baked perfectly. Yum!!!!!!!! Will be making quite regularly (I'm going to have get back in the gym too :)

Hot Fudge Cake

It baked up ok and was an easy recipe. I just thought it tasted like straight sugar - there wasn't really any other flavors and I wasn't crazy about the texture. I'll probably make it again, but only because my boyfriend loves it :)

Butternut Squash Fries

These did come out a little bit soggy but that's to be expected. I baked them more like 30-35 minutes though. Only 4 stars because I think they needed a little seasoning. I tossed in olive oil, salt, pepper and paprika and served with some sweet/savory dipping sauces. Boyfriend loved them so will probably make again. Thanks!

5 stars all the way! I added 2 jalapenos and toasted the bread slices before I chopped them. Also sliced a few green onions to toss on top when serving. This was fabulous - the boyfriend and I devoured it! Thanks so much for the recipe ;)

Mongolian Strawberry-Orange Juice Smoothie

I thought this was a good start--both my husband and I agreed that it needed more flavor. Next time I will add another half cup of strawberries and a little more sugar. This is a great smoothie for the morning or to replace a meal. I'm full! :)

Gnocchi II

Reviewed: Jan. 22, 2009
Would be helpful to specify the size of the potatoes. Apparently the ones I used were way too big because I had to add a lot of flour, and the dough was still very sticky. I still was able to boil them, and though they were a little on the soft side, they were delicious. My boyfriend and I both ate a huge plate - served them with vodka sauce. His roomate stole the leftovers out of the fridge and said "I don't have any idea what that stuff was your girlfriend made, but man it was good!" ha ha. Will make again for sure, but with less potato. Thanks!

Slow Cooker Chicken Taco Soup

Reviewed: Jan. 13, 2009
My husband would give it a five. I however, thought it was a bit salty--I think it was the taco seasoning I used--next time I will use the seasoning the cook for this recipe recommended. I give it four stars. We added cilantro, cheese, sour cream and a huge dollup of homemade guacamole. That really helped with the saltiness for me.

Beef Pot Roast

Reviewed: Jan. 10, 2009
This is a wonderful starting point for the recipe, its open enough so you can add your own spin on things. What I did-- I followed the directions--I cut everything in half, added potatoes to the pot as well as onions and carrots around the meat and then added a cup and a half of beef stock to the dutch oven (next time I will add even more--you can never put too much stock in a pot roast--makes for more tender meat and really tasty veggies) After it cooked ( I cooked it a bit longer than required--again a roast is awesome and safe in the dutch oven--I cooked it for 30-1 hour longer) I took the beef stock roast juices out of the pan and made gravy. It was awesome! It had a wonderful flavor! :) Also, super easy.
