Cream of Fresh Asparagus Soup I

I had some asparagus that had partially frozen in my fridge. I almost threw it out, but decided to try this recipe instead. My hubby & kids don't like asparagus, but they tasted the soup & said it was really good. That's a glowing review for them! I followed others suggestions, used stock instead of water, used only 2 cups of milk (which I forgot to warm, but it worked fine) and only added 1 Tbsp. of soy sauce. Turned out great! Served with sourdough grilled cheese & turkey sandwiches and everyone loved it!

Basic British Scones

I'm a southern girl, but since I tried this recipe I haven't made my southern biscuits at all! These have a great texture, a nice but not overpowering sweetness...yum!

Salad Dressing Cupcakes

These were very good. The texture was not quite what I was expecting, but it tastes very good, and kept very moist. I was leery because of another comment about the smell. I hate mayo (or any version of it) which is why I wanted to try these so I could get rid of a large jar of miracle whip I bought (to make potato salad). While combining the wet ingredients I definitely was put off by the smell. However, I found that once the flour and cocoa were mixed in it just smelled like regular cupcake batter. I will probably use this recipe again - it was VERY simple and yielded good results :)

Quick and Almost-Professional Buttercream Icing

Peach Pie the Old Fashioned Two Crust Way

I didn't care for this. It was so liquidy that the crust was soaked through after sitting for one day. I had to throw most of it away. What I did eat was ok, but I wasn't crazy about the flavor. Boyfriend didn't really like it that much either, and he will eat just about anything with sugar in it.

Make-Ahead Spinach Manicotti

This was super yum!!! I only soaked a few hours - 2 or 3 - and they came out perfect. No need to water the sauce (blah!). I put the cheese mixture in a ziploc, snipped of the end and piped it into the shells. Easy cheesy :)

Zucchini Bread IV

I'd never had (or made) this before, but I was presented with a 10 lb. zucchini....it made this bread and several other dishes. I had good reviews from my boyfriend. I took a loaf and a half to work and it disappeared pretty quickly. Nice texture and flavors.

Texas Brownies I

I actually baked these in muffin tins and put cream cheese icing on them. I'd thought they would bake up flat like a brownie, but they looked just like cupcakes. Took them into work and now I'm expected to start bringing in cupcakes regularly. I just can't figure out the texture. Too dry for a brownie, but too dense for cupcake. Whatever, it tastes good.

Slow Cooker Beef Stew I

My boyfriend was able to make this (he only had to call me twice, bless him) and it turned out really great. Would be 5 stars, but we found the seasoning a bit bland and had to add some after we started to eat. Really yummy.

Savory Cheddar Zucchini Muffins

A new family favorite! I used buttermilk instead of regular and 2 tsp. minced garlic from a jar. I also used a cheddar/jack mix of cheeses. After reading other reviews that they stuck to the papers, I made them without. They turned out great! I've got zucchini coming out of my garden like crazy, so I'm planning to make several batches & freeze them!

Baked Cheesecake Squares

I almost gave these 2 stars, but we did eat them so I guess they weren't That bad. But I also increased the amount of cream cheese and omitted the nuts from the crust. The crust was still like biting into a cracker and quite flavorless. The filling was not dense or thick like cheesecake, and I can't imagine only using the amount of cheese suggested in the recipe. Kind of a waste of ingredients - yikes. sorry.

Tomato, Cucumber and Red Onion Salad with Mint

Yumdiddlyumpcious! My co-worker has wild mint that grows in her yard and she gave me a gallon sized baggie full to use up. This salad was perfect! very refreshing. This made a huge batch - I had company for a barbecue and they all loved it. I devoured the leftovers over the next day or two :)

Tater Salad

The taste was really good - I used spicy deli style mustard instead (just my taste). I liked this because it didn't use a lot of mayo (blah!) I only gave it four stars because the egg boiling method did not work. Eggs came out runny and I didn't have time to make more, so I had to omit them from the recipe. bummer. Other than that, was very tasty. Thanks!

Whipped Cream Cream Cheese Frosting

As previously stated. Stick the mixing bowl and the beaters in the freezer before starting. Beat the whipped cream until very stiff. Stick the whipped cream in the freezer while mixing the cheese part, and then fold back it in and chill again before frosting. Absolutely no problems here. It was delicious, held up beautifully, and I added some cocoa powder to the cheese mixture since I used the white cake recipe. Double yum!

Hearty Turkey Soup with Parsley Dumplings

Great recipe! I've used leftover rotisserie chicken as well and the whole family loves it. I did saute' all the veggies first in olive oil. My family is picky about celery especially, so I wanted to make sure it was well cooked. Overall great recipe!
