Easy Alfredo Sauce I

I rarely comment on recipes, but this deserved special note. Yes, it doesn't taste like store bought or restaurant made, but this is "the real thing." The only way to make it more authentic is to add fresh cheese, grated right off the wheel, to the sauce, grate your pepper right into the sauce, and add a pinch of fresh ground nutmeg (yes, nutmeg). The last is critical -- it will add a lot of flavor, and make the cheese flavors come alive. Mange, mange!!

Lemon-Dilled Brussels Sprouts

The sauce got 4 stars because my family was dipping the the seared scallops in it. I'm not a huge fan of brussel sprouts and I wouldn't make this again for the sprouts (I'll stick to my honey bacon glaze to make them edible.)

Favorite Old Fashioned Gingerbread

As far as taste, I didn't care for this. But if you take my personal preference out of the equation I would rate this recipe a success. I added 1/2 c applesauce and doubled the spices like others mentioned. The cake was very moist and had a great texture and color. Turns out I'm just not a fan of gingerbread "bread"- but I do love the cookies! Go figure!

The Best Cheeseball

This is my first cheeseball to make. Following some suggestions from other reviews, I used a cup of pepper jack and a cup of cheddar cheeses. I used 2 jalapenos (next time I will leave the seeds in to pack some heat) I used about 2 tablespoons of worcestershire sauce, 2 teaspoons garlic powder, several drops of Louisiana hot sauce and a dash of lime juice. It turned out very well. I will definitely make this again.

Soft Oatmeal Cookies

Love this cookie! Like many, I tweaked mine based on the reviews. I coarsely chop 2 out of the 3 cups of oats, add 1 cup each of the white choc. chips, walnuts and sweetened dried cranberries (Craisens). I also add a tsp of cinnamon to the mixture as well. Just be sure to get them as uniform in size as possible to ensure even baking. I know that’s a “duh” moment for many of you, but I’m always in such a hurry I forget. ;-) I've always gotten rave reviews from this cookie and I'm so glad it was shared with us!

World's Best Peanut Butter Fudge

Heaven in a cube! Made me feel like a kid in Mom's kitchen all over again. I cooked the sugar mixture 6 minutes, used evaporated milk and added 1 tsp vanilla. And, I like to use super-chunk p/b. Adds a tad bit of texture. I added the p/b, marsh creme, 'nilla and flour one at a time, mixing thoroughly after each. By the time I poured the fudge into the pan it was ready to set. Didn't need to chill. Came out as smooth as silk. I will definitely make this again. Too yummy to keep just for Holidays!

Tiramisu

It was exactly like my first tiramisu that I had while I toured in Italy. I loved the fact that it also had rum. I made this with a little flair. For coffee, I used Starbucks Doubleshot coffee. U the best, Jackie, n keep up the good work.

Scalloped Potatoes and Onions

Fixed these potatoes tonight instead of baked ones to serve with NY strip steak and steamed broccoli. My goodness, I think they're the best scalloped potatoes I have ever had!! I did half the recipe because I was only cooking for the wife and I. I followed the recipe as written but I added two minced cloves of garlic with the onion to the butter and cooked a minute before adding the rest of the ingredients. I did mix the sauce and potatoes together in a large bowl before I layered them in my cassrole dish so all would be coated in the sauce. When they were done I sprinkled about two handfulls of shredded cheddar cheese, covered and let cheese melt. We like cheesy potatoes. These are very good, will be my scalloped potato recipe from on. Thank you!!

Cheesy Sour Cream and Salsa Dip

This dip is good!! I used 16 oz sour cream and 8 oz cream cheese. I adjusted the recipe accordingly with the exception if the rotel, and I added 2 drained cans. Oh and I left out the olives but will definitely put them in next time because I know that they will work well in it.

Sweet Coated Pecans

These are excellent. I made this with whole almonds. My changes: I used 1/2 white and 1/2 brown sugar; only 1 T water; added a splash of vanilla; and the zest from 1/2 an orange. Very yummy. Try this, you won't be disappointed.

Wassail Punch

Absolutely delish! I made this for our Christmas party and even those who never had it were loving it! I did cut the lemon juice to just a couple of squirts so it would not be so tart and I added 1/4 cup of sugar. Made my home smell absolutely divine! I used to make this when I was younger but I couldn't remember all the stuff in it, so thanks so much for sharing adn bringing back some great memories.

Raspberry and Almond Shortbread Thumbprints

My sister-in-law made these last year and I really loved them so I decided to make them this year. My husband and his co-workers loved them! I used melted white chocolate chips instead of the glaze b/c that's how my sister-in-law made them last year and I love the combination of white chocolate and raspberry.

Light and Fluffy Cream Cheese Frosting

This is SOOOO easy and delicious! It keeps its thickness unlike trying to whip your own cream. Everybody raves about it, and I just say, "thank you, thank you." You should definitely try this next time you need a fluffy cream cheese frosting. It's AMAZING on red velvet cupcakes!!
