Shrimp Burritos

Reviewed: Jul. 24, 2009
Wonderful!!! We're dieting around here, so I made this with brown rice - still cooked with tomatoes & broth, boiled the shrimp then mixed shrimp with rice. Used corn tortillas, fatfree yogurt, and low-fat olive oil mayo. The chipotle sauce still tasted very rich. Also, used fatfree refried beans. Kind of a lot of steps but so worth it. Making it again tonight for guests!

Tomato Chicken Parmesan

Reviewed: Feb. 6, 2008
I make this often, as my whole family loves it. I always pound the chicken thin, and top with either Cheddar or an Italian cheese blend. And I don't put the cheese on until the last few minutes. Really easy!

Oven-Fried Pork Chops

Reviewed: Jan. 31, 2008
These pork chops were delicious! Very juicy. I made a few changes, mainly because I didn't read the directions right: first, I did not bake the chops in melted butter. I melted the butter in a pan and sauteed the chops. Second, I did not have any bread crumbs, so I made some with crushed saltine crackers, chicken bouillon, granulated garlic and onion powder, to my taste. Turned out better than I ever would have expected.

Chai Tea Mix

Reviewed: Jan. 15, 2008
As written, it's slightly too sweet for my taste. I cut back to 2 cups sugar for 36 servings. I also substitute Splenda for some of the sugar (or use Splenda sugar blend). Other than that, this is wonderful! Thanks for submitting it!

Teriyaki Pork Tenderloin

This was a hit with my kids. It was definitely moist and tender. A little lacking in flavor in my opinion...seemed to be missing something. Very easy though.

Spicy Corn Dip

Reviewed: Sep. 29, 2007
I make this often. I use half the amount of sour cream and mayo, and twice as much cheese. And like others have said, it's really important to drain the veggies well. I add just a bit of cumin. YUM!

Chicken Breasts Stuffed with Perfection

Reviewed: Sep. 21, 2007
Maybe I pounded the chicken too thin, because it was really dry. I used goat cheese for the filling, and the combinations of flavors was amazing! I think next time I'll use more sour cream because the filling was a bit dry too.

Avocado Feta Salsa

Reviewed: Sep. 6, 2007
This was a big hit at my party, but I put an extra avocado in and I felt it could have used even one or two more in order for the feta to not be overpowering. Yummy, though, and different.

Pretty tasty, definitely easy. I couldn't taste the beer in it at all, like some said. Unfortunately my kids didn't like it.

Chicken with Lemon-Caper Sauce

This was perfect!!! Easy but restaurant-quality. I used chicken tenders because that's what I had, and I substituted Smart Balance for the butter. My whole family loved it. I'll make this often.

We loved this. The only thing I did differently was to use ketchup instead of tomato paste. This was so easy and tasty...definitely will make this again and again. It wasn't even too spicy for my little ones.

Fettuccini with Mushroom, Ham and Rose Sauce

Reviewed: Feb. 6, 2007
I love this recipe as written! I've made it several times. I've tried it using half and half instead of cream, as many have suggested, and to us, it is just not nearly as good! With most recipes, I can't tell the difference, but the heavy cream is needed here in our opinion.

Awesome Egg Salad with a Kick

Reviewed: Jan. 13, 2007
We loved this! I took others' advice and left out the bacon. Also, didn't have a red onion. Otherwise followed it exactly. Horseradish and sour cream makes it different (and better in our opinion) than regular egg salad.
