Shrimp Burritos

Wonderful!!! We're dieting around here, so I made this with brown rice - still cooked with tomatoes & broth, boiled the shrimp then mixed shrimp with rice. Used corn tortillas, fatfree yogurt, and low-fat olive oil mayo. The chipotle sauce still tasted very rich. Also, used fatfree refried beans. Kind of a lot of steps but so worth it. Making it again tonight for guests!

Tomato Chicken Parmesan

I make this often, as my whole family loves it. I always pound the chicken thin, and top with either Cheddar or an Italian cheese blend. And I don't put the cheese on until the last few minutes. Really easy!

Oven-Fried Pork Chops

These pork chops were delicious! Very juicy. I made a few changes, mainly because I didn't read the directions right: first, I did not bake the chops in melted butter. I melted the butter in a pan and sauteed the chops. Second, I did not have any bread crumbs, so I made some with crushed saltine crackers, chicken bouillon, granulated garlic and onion powder, to my taste. Turned out better than I ever would have expected.
