Mighty Matt's Kick-Butt Chili

My family loved this chili. I did make a couple of changes. I used beef broth instead of water, and added an additional 1/2 tsp of cumin. The pinto beans I used were fresh (not from a can)which I think made a huge difference. I also added a diced green bell pepper. Topped with cheddar cheese and served with cornbread. Will definitely use this one again :)

Marshmallow Fondant

This is a great recipe. The fondant was really easy to work with. My first batch was not so great, but my second batch was a success. I didnt use any of the butter. Instead I used non-stick cooking spray. Will be using this recipe again real soon!

Eggplant Parmesan II

This smelled great and was interesting to make considering I have NEVER eaten EGGPLANT and probably never will again! The recipe was great except for the eggplant, the consistency of the Veggie just didn't sit right with my taste buds. This seems like a great veggie dish but I would pass it up any day for some good ole MEAT!! sorry kiddos...

Cheap, Easy and very filling!! I would advise to half it cause I could not find a pan big enough to hold all of it. Will make again...good idea for potluck!

Used organic squash from the garden and was pretty good. Nothing earth shattering but different yes. Its missing something. Next time might add bacon or tomato. Its just a tad bland honestly.

Baked Pork Chops I

Very scrumptious and hearty. Husband loved it. I had ALMOST everything in the kitchen to make it(just missing white wine but a quick trip to the store resolved this) I did READ AHEAD and doubled up the sauce and VERY GLAD i did cause we were needing more for the potatoes i made for them. I cooked for 25/25 and it was very tender I cant imagine cooking for an HOUR and a HALF! Will cook again!!!!!

Grilled Marinated Shrimp

WELL DONE!!! This marinade makes the best shrimp! I doubled the recipe...we were making 4lbs. of shrimp. I bought jumbo frozen shrimp, they were butterflyed for the grill. Marinated for about 3 hrs. Perfection. I did add a tad of cayenne, cuz we like it hot. Really, just thanks so much for this outstanding marinade. We just ate, and my whole house is happy!
