I really liked this recipe! It was easy with simple ingredients. Even a poor, starving college kid could afford it! Thank you for a great meal inspiration. Leftovers are great, too!

Cinnamon Bread I

This is a good breakfast bread. It's not overly sweet, unless you add some chocolate chips in it like I did. It was very good and filling. I made buttermilk by using 1 tbs white vinegar and 1 c skim milk.

The taste was great. However, this recipe ended up being more of a semi-dense chocolate cake and not brownies. Loved the chocolate glaze mixture.

Garlic Mashed Red Potatoes

Reviewed: Jan. 28, 2009
This was a very good recipe. The potatoes seemed a bit thick and probably need just a little more milk that the recipe calls. I would also probably add a little more salt and just a dash of pepper.

Sausage Spinach Alfredo Lasagna

Reviewed: Jan. 25, 2009
Great tasting recipe for an alternative to traditional tomatoe sauce based lasagne! My husband dosn't like tomatoe sauce, so I am always looking for a good white sauce recipe. The only reason I give 4 instead of 5 stars is because of the no bake noodles. I have made this reciped twice and it was great both times and my family loved it. The first time I used the no bake noodles, and they came out tough and hard to eat! They weren't soft like regular lasagne noodles after cooking. Couldn't even hardly break them with a fork. So I made it again with regular lasagne noodles. Cooked them per package direction then added them to the reciped. I also sauted some onions and fresh mushrooms into the sausage when it was partially cooked through and this just added to the great flavorful recipe. Using regular noodles vs the no bake makes this a 5 star recipe!

Home Style Macaroni and Cheese

Reviewed: Jan. 20, 2009
This was a wonderful base. I did change a few things. We did not have any dijon mustard, which my wife does not like anyway, so I added 1/2 tsp of minced garlic to the mixture. I also added 1/2 cup of grated parmesan cheese with the cheddar. I also used low-fat cream cheese, and it was plenty creamy. Let me say, this recipe was spectacular, and my wife loved it and is her new favorite mac and cheese recipe.

Decorator Frosting

This was really good icing. We used it on some spiced sugar cookies and it blended perfectly. One thing to make sure of, unless you want what my wife calls (snow icing), is that the butter/margarine is completely at room temperature to ensure that the ingredients meld together.

Feta Cheese and Bacon Stuffed Breasts

Reviewed: Dec. 12, 2008
This recipe is so easy to make and so delicious. It sounds like you spent a lot of time in the kitchen making and in reality it takes about 20 minutes tops. The only thing I would add is a little more lemon juice to give it more of a tang, but that is just personal preference. Def try this!!! YUMMY!!!!

Gingerbread Men

Reviewed: Dec. 9, 2008
This is a great mild gingerbread cookie. I made a few revisions, which is why I didn't give it 5 stars: add tsp vanilla, used 2 tsp of ginger, added a sprinkle of cloves and nutmeg for just a little more spice to bring out the ginger flavor. Also, I used vanilla instant pudding mix instead of butterscotch. These turned out wonderful. The dough was a little light and cracked right out of the fridge, but once you start working with it, it gets darker at room temperature and sticks together very well.

Rich Chocolate Pumpkin Truffles

Reviewed: Nov. 18, 2008
I didn't add the chocolate into the recipe, and I added a little vanilla, nutmeg, and ground cloves into the mixture. I refrigerated it overnight and used the chocolate to dip the truffles in to create a more pumpkin flavored center. I also used apple juice instead of the liqueur. They turned out really good. Next time, I will probably just use pumpkin pie spice and a little vanilla.

Best Big, Fat, Chewy Chocolate Chip Cookie

Reviewed: Aug. 16, 2008
These cookies are WONDERFUL! I made them for my dad, who is diabetic, and used the splenda white and brown sugar blends. I also used smart balance in place of butter. I learned my lesson on the first batch - don't cook them for 15 minutes! 9 minutes was perfect for mine. (they do not look done at all.) THANK YOU for this wonderful recipe!

I have made this salad over and over the past few months for family reunions, church functions, and family get togethers. Everyone loves it! I mix 1/2 mayo and 1/2 sour cream for the dressing and a little extra on the bacon, otherwise it great just like it is!!

Salmon Chowder

Reviewed: Jul. 4, 2008
This recipe was great, even with some of the healthy changes I made! Insead of conventional butter I used Earth Balance, I used veggie broth rather than chicken broth, I also opted for skim evaporated milk and wheat gluten in exchange for the regular evaporated milk, and used a couple tablespoons of nutritional yeast instead of cheese along with many of the suggestions offered by others (namely, the fresh salmon and addition of liquid smoke). And since I didn't have any dill, and I'm not sure if I'd particularly like it with dill, I used fresh basil from my garden to top it off. Thanks for the recipe, it's definitely a keeper!
