Black Beans and Rice

This was delish! I made it with brown bastmati rice and added chili powder and oregano. I used chicken broth since that's what I had. It was the perfect side to chicken enchiladas!

Shrimp Scampi Bake

I've made this twice, and twice I've loved it! The cooking time is off though. The first time I used 1 1/2 lbs. and cooked them for about 8 minutes and tonight I only made 1/4 lb. and they were done in about 6 mins. Definitely keep an eye on them! Added a bit of white wine to the sauce to add a little more. Delicious!

Broiled Tilapia Parmesan

I didn't have celery salt, so I used garlic and parsley salt instead. The sauce was really good. I don't like fish that much, and the one I got tasted especially "fishy," but I was able to eat it thanks to the topping.

Maple Dill Carrots

These were really tasty. I used frozen carrots and dry dill because that's all I had and since my two-year-old was going to be eating them, I cut the pepper in half. The sauce didn't stick, but I wasn't expecting it to, but it gave the carrots a really nice flavor.

Black Bean Vegetable Soup

I loved it! I did make a couple of changes though (sorry!). I followed other's advice and halfed the stock (used chicken b/c that's what I had) and I halved the chili powder b/c 2 tsps seemed like too much. I couldn't get enough of it and almost ate the whole batch!

Easy BBQ Bake

Chocolate Chip Pancakes

I made these this morning and we loved them! My 2-year-old kept going to my husband and me for more after he was done with his. I added a splash of vanilla, but otherwise, the recipe is perfect. The pancakes were really fluffy. Delicious!

Best Spinach Dip Ever

I made it last night to take to a Super Bowl party today and right after I made it I didn't really like it because the leek soup taste was so strong but I let it sit overnight and today I couldn't get enough of it! The only change I made was to use the whole 10 oz. of spinach. It was awesome!

Stuffed Peppers

These were sooo yummy! Even though I'm sure they would've turned out just as great without any changes, I did make some adjustments. I also blanched the peppers for 2 minutes like suggested by other reviewers. I cooked the rice in chicken broth, I only used one can of tomato sauce and I added 1/4 cup of cheddar cheese to the filling. I covered the pan with aluminum foil and didn't use any extra sauce or baste the peppers. I used up all the filling on three peppers, but that was enough for my family. Can't wait to have the leftovers tomorrow!

Carne Asada Tacos

I loved these! I was raised in Mexico and they reminded me of the tacos from the street vendors we used to eat. Our mexican "fast food!" One change I made was to cut the meat into tiny pieces (diced, I guess!) I heated the tortillas in the microwave between two damp paper towels and then cooked them in a bit of oil for a few seconds on each side which makes them softer. I didn't make the salsa, used Herdez salsa verde. Yummy!

Baked Spaghetti

I really liked this recipe but my husband said it was the poor man's version of baked ziti. Whatever that means! There was a ton of food, so will definitely cut the recipe if I make it again since it was only the two of us and my fussy toddler.

Chicken-Baked Chops

These were really great! I omitted the oil and broiled the porkchops for 6 minutes on each side like a previous reviewer suggested. The chops were so tender and the gravy was really tasty. Will definitely add to my regular rotation!

Tofu Chocolate Pudding

Remember you are using tofu so it is going to have that tofu taste. You can't expect it to taste like real chocolate pudding. But it's still really good. My kids and husband really liked it. Tip: If you use soft tofu you get a smoother texture and if you chill it overnight it has a better taste.

Grandma's Lemon Meringue Pie

I made this today and it was great, but a bit too overpowering. I think 1 lemon w/ zest will work better, aswell as 3 eggs instead of four. Plus you did not mention cooling time...However, 45 min on the counter and 2 hours in the fridge worked magic. I will make this wonderful pie for the rest of my life; it is the closest to grandmas, in texture and taste, that I have found.

Basic Crepes

I was floored at how easy and delicious these crepes were! I modified a bit: + 1tbs of sugar & 1/4 cup more water(I found them to be a bit too thick). Last night I tested, and tonight I have friends comming over for a crepe escape dinner. Thank you!

Coconut Custard Pie I

I found this pie to be most delicious, and I'm not a coconut fan. I used 1 cup of sugar, and maybe next time I might use heavy cream instead of milk to give the custard a bit more body. All my friends are begging for more!
