Joey's Peanut Butter Cookies

I was looking for a good peanut butter cookie recipe with simple ingredients and found it with this recipe. Very light peanut butter taste, moist and delicious. It seems to be off a bit, next time I will try to add a bit more baking powder and peanut butter.

Buffalo Chicken Fingers

These were really good. I used olive oil in the bottom of the pan instead of cooking spray to be sure they crisped up and it turned out perfect. I cut them into strips and served over a salad. Yummy!

Lentils and Rice with Fried Onions (Mujadarrah)

This was really good. My dh and I loved it. Ifollowed some previous suggestions and used garam masala, cinnamon, garlic and cumin. It still was pretty mild. But the onions and yogurt made all the difference. Cheap and yummy. Oh and definitly go for extra onions.

Yeast Dumplings

Yep, these were delicious! These are the dumplings I have been looking for. Actually, they were different than what I was looking for... but better than anything I have tried! I cooked about 12 minutes, and followed instructions exactly other than that, adding them to my normal chicken and dumpling recipe. I agree with poster who said they were too large, though — I would probably cut 1" x 2" squares next time and maybe roll the dough a little thinner than 1/2" -- but will definitely make these again.

Crab Dip

Everyone gobbled it up! I actually served it with chips as an appetizer and it was gone in minutes!! I tweaked it a bit here and there with some extra spices, just for my liking.... Overall GREAT recipe!

Dressed-Up Broccoli

Yummy Pork Chops

I don't have a good track record with pork chops. They always come out dry. But I wanted something different so I gave it a shot. They turned out pretty good. My chops were an inch thick and I wanted to be sure they got done, so first I seared them for a few minutes per side in olive oil. I whisked into the dressing about a teaspoon of corn starch. I put the seared chops over onions, poured the dressing over and baked them at 350 for almost an hour, covered. To me, it wasn't anything to write home about, but my husband loved them so it's all good.

Peanut Butter Frosting

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo

These were sooo good! The slaw was a little hot for me, but my husband said it was perfect, so if you like it hot, go for it! I used cod because that's what I had bought. I will make this one again for sure.

Heavenly Pink Salad

This is so yummy, I can't quit picking at it in the fridge. I chopped the cherries up first so they would be evenly dispersed in the salad. I don't like to get a big ol' piece of cherry in a bite. I also added a small box of instant French vanilla pudding. I mixed it in first with the whipped topping. Perfecto!

Blueberry Muffins I

Ijust made these muffins and they turned out pretty good. I think more than anything they need salt added to the batter and more sugar. I added 3/4 cup and they still were not very sweet. But with those changes I would make them again.

Rempel Family Meatloaf

This is the best meatloaf. I used a 1.3-pound package of lean ground turkey and 1 pound of extra-lean ground beef. I also used 2 packages of the onion soup mix. This makes yummy meatloaf sandwiches with the leftovers. Highly recommend this one!

Swiss Chicken Casserole II

Holy cow this is amazing! I figured I would like it, but my husband and I LOVED it! Made it as is, no changes. I use Publix frozen chicken breasts and I don't even thaw them out, I just put them in there frozen and it still comes out wonderfully. It's even great reheated!!! Thanks for a superb recipe! It's going on my regular rotation.

Fruit Salsa with Cinnamon Tortilla Chips

Super good, only instead of making chips, I pan fry the tortilla with cin./sugar and then spoon some of the salsa into the tortilla, fold it over and cut it up like quesadillas. The sugar caramelizes and the tortilla forms a sort of hardened shell around the fruit. It's amazing! I think I'll make it again soon...

KRETSCHMAR® French Bistro Turkey Sandwich

I altered it a bit to fit what I had on hand, so I used Swiss cheese and potato bread. I also decided I was in the mood for a warm sandwich, so I broiled it open and then put the two halves together. Super sandwich. I enjoyed the mild flavor of the cheese and apple (macintosh) as you were able to really taste the mustard/honey/mayo mixture. Will do this on a regular basis.
