Full time employed as a Quality/Welding Specialist in the Offshore Fabrication Group. I sometimes work overseas but I am luckier than most, I am a woman and I can cook for myself because eating in other countries can some times be a big challenge. I can even cook in small plug in pans in a small Asian Hotels and be Happy. I have never been able to develope a taste for Asian Foods.

Leftover Chicken a la King

I thought this went over very well! I used 1 cup chicken broth, 1/4 cup white cooking wine and 1/4 cup water. I used probably a TBSP of cornstarch, but at the very end, when it still wasn't thickening, I removed about 2 TBSP of the liquid and added a tiny bit of flour to make a paste. When I added it back in it thickened up nicely. I added various spices that we like, served it over rice, and everyone ate a bunch! Thanks for the recipe!

Chicken Fettuccini Alfredo

This was absolutely delicious! The only change I made was to leave out the tomatoes. We don't care for them and they seem sort of an odd ingredient for this dish. I accidentally cooked the chicken with the garlic, oregano and onion, but the only difference that made was to darken the color of the sauce just a bit. The taste is still just as good. Next time I am going to try making it with shrimp, but it is definitely a keeper. Thanks.

Clark's Quiche

This is by far the best recipe for quiche. It is DELICIOUS!!. My hat goes off to Clark for this one. He must be quite handy in the kitchen too, because his 15 min. prep time took me 1-1/2 hours. LOL BUT, it was worth every minute. Since I carry this to personal gatherings, I do use my own quiche pie pans and a ready made crust I roll out and form in the dish, but I would change nothing else. I have received the nicest and sweetest compliments every time I serve this dish. Thank you Clark for this AWESOME recipe and sharing such a delicious yummy food with the rest of us!!
