My family really liked this potpie. This was the very first one I have ever made! I think I will add some diced potato to the mixture next time. Very good, will make again!

Eggplant Parmesan II

My mom said this was the best eggplant parm she has ever eaten! I followed the recipe with the exception of sauted kale. I added it more to boost the nutritional value than for taste. This recipe is a definite keeper!

15-Minute Dinner Nachos Supreme

Reviewed: Jul. 24, 2009
First off, I loved the concept of your recipe. I made some revisions. I started with ground turkey and sauteed it with Shillings Mesquite Marinade. I added green Onions and a jar od fire roasted salsa. I added one can of drained pinto beans and a can of drained black beans. Separately, I cooked a cup and a half of arborio rice substituting a half cup of Goya Chipolle Mojo sauce and the rest of the water. After cooking in the rice cooker, I added the cook rice to the skillet. Continuing to let it simmer till bubbling. I removed from the heat and topped with generous grayed cheese, a mixture of cheddar and jack. Topped with chopped tomatoes, avocado slices and sour cream. Then served over tortilla chip.

Brooke's Best Bombshell Brownies

Reviewed: Jul. 13, 2009
These were wonderful!! I did as the recipe said, then mixed pecans into half of the batter. I dusted my pan with sweetened chocolate which gave them a chocolately crusty crunch.(like they needed more chocolate, ha)! They were almost gone before I could get them cooled down!! I've been asked for the recipe already, and also asked to keep this one handy, as I'll be asked to make these alot more often!!!!

Beer-Boiled Shrimp

Reviewed: Jun. 21, 2009
I followed Recipe till the end! Then, I tasted them before serving them. Blah....No flavor but butter! Not sure what I was expecting...but was hoping for more spunk. So, we added lots & Lots of fresh ground black pepper, and 2 TBL. of crushed garlic. A couple big shakes of chili powder, heated it up again to let the flavors get together. After an about/face...We all decided it was great! Wish we knew our measurements!!But at least we enjoyed the spicier flavor, and our bagette loved the spicy flavor as well!!

Ice Cream Cake

Reviewed: Apr. 14, 2009
Used the idea but made a few changes for ease-sake...I made 2 cakes (each 9X13) and cut both down the middle instead of slicing one cake into two thin halves. I also let the ice cream defrost just a bit and took the advice of the first reviewer and beat it with a mixer to get it soft. I then spread the softened ice cream between both cakes and put the cakes together. I made one side chocolate cake with coffee ice cream and the other yellow cake with strawberry ice cream. I iced with Cool Whip and decorated with chocolate syrup on once side and halved strawberries on the other. It was pretty, easy and impressive and was enough to serve 30 adults. What a party cake!

Oriental Sesame Slaw

Reviewed: Apr. 13, 2009
Served alongside pulled pork sandwiches and it was goooooood....even those who don't normally like cole slaw tried and loved this recipe. I probably won't ever make another version of slaw...I tooke the advice of another reviewer and matchsticked the jicama which added a great crunch. I used one purple & one green cabbage and it ended up being enough for a party of 20! Would definitely encourage making the day before as the taste gets better the longer it's allowed to marinate.

Great, quick recipe. I used bacon instead of sausage and mild Rotel instead of tomatoes. Spiced it up with some garlic, black pepper, cumin, oregano. Let it simmer for about an hour and it was delicious!

Baked Beef Stew

Have to admit, I was a little skeptical of baking a stew. This was delicious! I added another can of tomatoes (drained). The tapioca did a great job of slightly thickening the stew. We loved this recipe and have made it many times!
