Iced Pumpkin Cookies

These cookies are so easy but look and taste professional. One of the best cookie recipes I've found! Based on another cook's advice, I shaped mine with a spoon. If you spray the back of the spoon with cooking spray it won't stick and will really smooth out the surface of the cookie.

Jim Kaczmarek's Chili

Used ground meat because it's what I had but look forward to using the chuck as that is my preference for chili. Used water instead of beer, skipped the salt and used sodium free bouillon, teaspoons instead of tablespoons. Cut cumin by half and added just a pinch of cinnamon.

Quick and Easy Lemon Pie

Tastes very refreshing, but it never set up for me. On the suggestion of other cooks, I put the pie in the freezer for some time, but when it came out the filling just ran all over the place. Maybe the pie filling would be better chilled in parfait glasses.

Apple-Filled Cranberry Muffins

Great holiday recipe! The apple layer really "makes" these muffins. Next time I will use more apples. I added chopped pecans to the apple layer and the cranberry batter.

Famous Butter Chicken

Great taste! Used only about a 1/4 cup of butter, if it was even that ... I wouldn't go less than that or else it turns out dry. Loved the crunchy crust; better than fried, in my opinion! Thanks! :)

Homemade Crispy Seasoned French Fries

Curtido (El Salvadoran Cabbage Salad)

I skipped the oregano and added a minced jalapeno. The kids didn't touch it but that just left more for me. Have been eating the leftovers on bean burritos and think I can say this is my favorite "slaw" type salad ever.

Pupusas de Queso (Cheese-Stuffed Tortillas)

I'm not sure about the proportions of masa to water. I added more water and they were still too dry so I dumped leftover cheese on top. Probably just takes making this a few times to get the right feel of the dough, more by feel, less by measure. Kids liked it and I look forward to"making it mine". Used black beans and jack for the trial run.

Real Homemade Tamales

I used the reduced liquid from cooking my pork instead of the beef broth. I thought I'd failed this miserably because after the steam time they were mushy. I opened some up and chopped and "cooked" them in a fry pan and called it tamale hash. Tasty but not too visual. I tossed the rest in the fridge to deal with later. Next day I took them out to play with and they were perfect. Think maybe I just had too much water in the steamer.

Feta-Stuffed Hamburgers

I usually add my spices to about 1/4 cup of red wine then let it sit before pouring over the ground meat and mixing with 2 forks. This worked well with the feta. I added hickory chips to the charcoal which really added to the overall taste.

Oregon Salmon Patties

Love the dry mustard and parsley in these. I used a bit of olive oil instead of the butter & shortening, and 2 green onions in place of the white onion. Will definitely make again.

Light Wheat Rolls

I use this one more than any other roll recipe. I back out some ww flour, maybe 1/4 cup, and add wheat bran. I never spiral, usually divide then cut each into 4 pieces before putting into muffin cups.

Apple Avocado Salad with Tangerine Dressing

Coconut Milk Shrimp Soup

Great flavor! I stuck to the recipe except for leaving out one of the carrots and adding 1 chopped celery stalk when cooking the mushrooms. I agree with the previous reviewer that there wasn't enough liquid to call this a soup; the pasta just soaks it all up. I added 4 cups of veggie stock to make more of a broth. This soup is attractive and a nice way to switch up my usual rotation of meals. Thanks!
