Authentic Enchiladas Verdes

Very good enchiladas. Next time I will use one less pepper because it was very spicy and I will add a little monterrey jack cheese in with the chicken. Other than that, they were delicious!

Homesteader Cornbread

Amazingly moist cornbread! I thought that maybe I undercooked it at first because it was so moist but it was thoroughly cooked and thoroughly delicious! The only change I will make next time is to soak the cornbread in buttermilk and add a little more salt. Otherwise, perfect recipe!

Beef Barley Vegetable Soup

Green Chile Chicken Stew

I would change the name of this recipe to soup but it was delicious all the same. Just a little too thin to call stew. I cooked it on Saturday and we had it for dinner on Sunday. It was delicious! We added some tortilla chips at the bottom and a sprinkle of jack cheese to the top. Everyone raved about it. I will definitely make this one again...just a little spicier though! Update: Made this again tonight and although I didn't have the habanero peppers, it was delicious. I just added about 1/2 cup of sliced jalapenos and a can of spicy Rotel. LOVE THIS RECIPE!!!

Gravy Baked Pork Chops

Nice recipe. I added garlic and onion while grilling the pork chops and seasoned it with Tony Chacheres. The chops were a little dry, and I'm not sure why. But, they tasted really nice with the gravy.

Amazing Pork Tenderloin in the Slow Cooker

Delicious flavor and SO easy to make. The only thing I will do is cut the soy sauce in half next time. My 12 year old son could pick out the soy sauce flavor right off the bat, so I thought it was possibly too much. I will definitely make this again.

Parmesan Baked Potatoes

Really nice addition my side dish repertoire. Very easy to make and nice flavor. I had about 2T of parmesan cheese remaining after I put it in the baking dish, so I sprinkled the remainder on top of the potatoes. Very yummy!

Spicy Tortilla Roll-Ups

Buffalo Chicken Dip

Made this for a party last night and it was a hit! People kept coming up to me asking what the spicy crab dip was. I had to explain that it was buffalo chicken, but by the end of the evening, the bowl was empty and there was a TON of food to choose from. So, I would say it was a success!

Loved it! I made this for a party and received tons of compliments. The only modification I made was using half a red onion versus a whole one. Following the suggestions of other reviewers, I also used a can of corn (drained) instead of frozen.

Tomato-Curry Lentil Stew

This was great! I more/less quadrupled* the recipe to have enough for the family, and everyone loved it... including the kids! Absolutely fantastic, and we'll definitely do it again. *I used a 1-pound bag of lentils and multiplied other ingredients except the celery and garlic accordingly. Two ribs of celery plus a fistful of leaves was sufficient, and I didn't dare throw in more than four garlic cloves. Results were outstanding!
