Pumpkin Cookies V

SOOO amazing!! I've made these twice and they are YUUUMMY! The second time I ran out of pumking puree, so I used sweet potato puree and you couldn't even tell the difference! I'll make them again, for SURE!

Baked Pesto Chicken

Spinach Dip with Water Chestnuts

Love it! Served with tortilla strips the first time, and the second time i had some with Hawaiian bread and LOVED it, so I think I will continue serving with Hawaiian bread! I also left out the water chesnuts the first time and the dip was a hit either way. The second time i made this, I made a few changes: I added Jicama instead of the water chestnuts and decided its just better without and i used half low fat mayo and half regular... couldn't tell the difference really.

not exactly how i wanted it to turn out b/c some veggies were getting over cooked and others were still super hard (like the Butter squash and potatoes).. so my mom said next time i should pre cook the veggies that will take longer in the microwave before hand

Grilled Salmon I

Delicious and a big hit with my family. Baked instead of grilled. Put it in a foil packet WITH the marinade and sealed and cooked for about 20 min or so. So moist and tasted sooo good!

White Chocolate Raspberry Cheesecake

Everyone really liked this cheesecake...I wouldn't say i LOVED it, but it was good. Came out good, it set perfectly and the texture was good, better than when i tried to make a thicker NY style cheesecake, so that's good! Made it for my sister's birthday and every piece was devoured and enjoyed! :)
