Creole Black-Eyed Peas and Rice

I made black eyed peas last night and no one ate it. So, tonight I had tons of leftovers and I tried using them on this recipe. I made it without the rice and we ate it with fresh tomatoe slices on the side. It was delicious! These were the best black eyed peas we have ever had!

Caribbean Coconut Chicken

First off, let me say I feel really bad about writing this. However, I feel that this is what these reviews are intended for. I found this recipe terrible!! That’s really saying a lot for me. My husband calls me “unusually unpicky”, meaning that I like practically everything I eat. It was overly “peppery” and the coconut milk could not even be tasted. My 8 year old asked if we were having enchiladas for dinner….that’s how overpowering the peppers were. I will never make this again.

Bacon Water Chestnut Rolls

If I could give these more stars I would!!! They disappeared at the holidays in the blink of an eye and I doubled the batch!! I did double the sauce...used some while baking it and some for dipping when served. I also inserted toothpicks to make it easier to grab and eat. Will make again and again....Super Bowl Sunday will certainly see many of these appetizers on our table...I may try this sauce with shrimp too....the sauce is simply divine!!! Thanks!!!

Annie's Fruit Salsa and Cinnamon Chips

After all of the great reviews for this recipe...I have to admit I was a bit disappointed. The fruit became mushy and kind of soupy. I took the advice of a lot of reviewers to tweak that issue, but overall it was one of the only dishes on our holiday appetizer table that went almost untouched.

Crab Dip

Made this for the holidays with a few changes. I used Old Bay Seasoning (A BIG MUST!!), added a little more lemon juice, used chive cream cheese, and also added some fresh minced garlic. Also sprinkled with cheese before cooking...and it was great! Even the kids loved it. I love serving it in the bread bowl...will make again! Thanks!!

Chicken Enchilada Dip

Thus was one of may appetizers I made for the holidays and it was a hit! I used canned chicken due to timing issues...added some garlic powder and one more jalapeno(we like more fire in our food!) This was super easy and super tasty! Thanks so much...will be served again super bowl Sunday!!

Eggnog Cookies I

This recipe won the annual Christmas Cookie Contest at my mom's house last year. I made them on foil and peeled the foil off, and they came off great. I also drizzled white chocolate across the top to add a little pizzaz. This dough is very versitile, since you can made the base without the nutmeg and then divide it into three bowls, add nutmeg to one for eggnog cookies, white chocolate chips to another, and molasses and ginger/cinnamon to another and get three different kinds of cookies from one mixing of dough. If you beat the dough a long time the cookies turn out nice and chewey. If they are too flat for you, just add a little more flour to the recipe. I always bake a test batch before I put the flour in the fridge for any reason. This is a great recipe!

Great recipe! Make sure not to make them too small, better to err on the side of too large. Takes only 5 seconds to make this, as a mother of three, I'll be coming back to this recipe often!

Beef Cabbage Stew

Yummy!! Served this last night to my husband and 2 kiddos (7&8) and what little was left, I ate for breakfast! In the past I haven't had much luck with beef stews because the meat always turned out so tough. This stew was the only one that I've made where the beef was tender. Thanks for the recipe!!

Chicken and Bow Tie Pasta

I started with pre-seasoned lemon pepper chicken breasts. (I have like a huge freezer full because they were on sale.) I boiled them in lots of water with 2 teaspoons bouillion mixed in. After removing the chicken, I brought the broth back up to boiling and added the noodles to the pot. Everything else I followed except I added mushrooms and used frozen broccoli instead of fresh...the broccoli got a little soft but I still enjoyed it immensely. It was excellent!!

These got mixed review over the holiday. People either loved them or hated them. I did cut back on the mayo but the main complaint was the mayo taste. Might make again and play around with th recipe, but won't make again as is. I personally liked them, but I am a mayo lover..

Chocolate Chip Pumpkin Bread

If I could give this more stars I would!!! I only made 2 little changes...I cut back on the nutmeg, and instead of 3 cups white sugar, I used 2 cups white, 1 cup light brown sugar. This bread was so moist and yummy. I made three loaves for Thanksgiving and it was gone in the blink of an eye. I have already been asked to triple the recipe for the Christmas holidays!! Thanks for a new family favorite!!!

I put 3 tbsp mayo, added chopped peanuts and green onions rather than dried onion. I reduced the parsley to 1 tsp, though with fresh parsley it might be good with a tablespoon. This was an excellent recipe. Thanks!

Thanksgiving Day Creamed Turnips

We grew turnips in our garden for the first time this year, and they grew like crazy. This recipe is great and I would totally use it again! I left out the sugar, since it was not Thanksgiving and we didn't need any extra sugar. My family is not really fond of turnips, but we ate this all gone. It tastes like brocoli with white cheese melted over them... Not bad for turnips!
