Strawberry Spice Loaf

I love this bread. I always have strawberrys around the house for the kids and this is a great breakfast bread!! I coat my pans with a little sugar before pouring the mixture in the prepared pan and when it comes out in makes a little crust on top of the bread.

Cottage Cheese Chicken Enchiladas

These enchiladas were wonderful! I assembled the night before and baked when I got home the next night. I shredded two cooked rotisserie breasts, doubled the sauce, used green (instead of red) enchilada sauce, and fresh serranos (instead of green chilies) and the were delicious! I was able to make two trays--a 13x9 and a 9x9 and each tortilla was stuffed full! Fast, easy and delish!

Spooky Witches Fingers

First off, let me say that these were a lot of fun to make! Like many others, I added some green food coloring to tint the fingers and added some warts. They turned out looking great. However, they were very tasteless. I was so disappointed in how bland they were. It's a great idea-needs some tweeking in terms of taste.

Raspberry Split Seconds

These are great! I doubled them and added double the almond extract. When I rolled them out I rolled them in powdered sugar. Everything in this I always have on hand so it was really quick and easy!!

This is really good, and my family enjoys it. we like things really spicy so we do use hot salsa. The meatballs were bland so second time I used garlic, basil, oregano, and some fresh pepper. Much better. I serve with warm bread. A wonderful satisfying meal. Thanks!

Baby Back Ribs

These were amazing. Made my own BBQ sauce from scratch and marinated all night. Put in the oven and finished these on the grill for about 15 minutes. They were gone in a flash!

Famous Butter Chicken

This was an easy and delicious way to make chicken. Instead of garlic salt I used garlic powder as we aren't big on salty foods. I also baked on a low rack on top of a cookie sheet so that both sides were crispy and brown. The family loved it. Served with fried potatoes and green beans for a quick week day meal. Thanks.

Oriental Cold Noodle Salad

Love this recipe! So easy to put together and it only gets better with time! I added some fresh grated ginger and sugar snap peas and left out the peanuts. Great way to add these healthy buckwheat noodles to your diet!

Tomato and Mozzarella Bites

I made these for a birthday party this past weekend and everyone loved them! The best part--they are so simple to put together. I bought the marinated mozzarella balls and tomatoes from SAMS Club and had thai basil on hand so it took no time to assemble. Once assembled, I lightly sprinkled with some kosher salt and done. Such a fabulous idea!

Oven Roasted Potatoes

Delish! I pretty much followed the recipe. I used fresh thyme instead of dried and cayenne pepper instead of crush red pepper. We try to eat healthy and I don't normally make potatoes as a side item, but there are fabulous!!
