Seared Sea Scallops

I thought these were awesome. I only made 4 very large scallops to accompany to filet mignions. I served them w/ fresh lemon. I had no issues with the flour making them soggy.

Stuffed Mushrooms I

This was very easy - I did not have canned crab, so I used the imitation and it was fine. I also added some lemon pepper and Old Bay. I made them an hour ahead of time and put them in the fridge. I baked them for about 7 minutes longer.

Chicken Marsala

This was very easy! I used 1.65lbs of boneless chicken breasts and cut them into smaller portions. I was able to cook all the meat at once. I served it with a salad and angel hair pasta. This is a definite repeat.

Potato Salmon Patties

These were absolutely wonderful. I could not find garlic & herb seasoned bread crumbs at the store so I opted for Italian seasoned. I added a little garlic salt and figured that was close enough. Made the patties larger than recipe suggested and cooked a little longer. Thanks for the recipe!

Artichoke Cheese Dip

This has an excellent flavor but did not care for all the grease. I took paper towels and soaked it up. Tasted even better the next day. Served with toasted french bread. Might or might not make again.

Easy Mexican Casserole

This was excellent. I did change a couple of things. Added garlic, used black beans instead of chili beans, added corn and chopped canned chilies. I also mixed monterrey jack in with the cheddar. The salsa I used was Joe T. Garcia's, medium. My fiance loved this recipe and gave me the line, "It's a keeper!" The wonderful thing about this recipe is you can add anything. Want it hot, add hot salsa.

St. Louis Toasted Ravioli

Chicken in a Pot

At home alone one night and did not want to make a big fuss over dinner. This was great. It was super quick! Next time I will omit the bread crumbs due to they really did nothing for the dish. When you simmer with sauce and cover they get soggy. The chicken however was excellent, very tender. The sauce was one of the best I have had with chicken. Served with white rice and steamed summer squash. Leftovers were even better! Thanx again!

Slow Cooked Corned Beef for Sandwiches

This was excellent - I only had one corned beef, so I halved the recipe. The flavors were great - we only had enough meat left over for 1 sandwich the next day - I will definitely use 2 corned beefs next time!

Garlic Chicken Stir Fry

For my birthday last week I received a wok. Well that opens up a whole new world to my kitchen. I told my fiance we were going on an Asain trip so have his chop sticks ready! I love cooking new things. I invited over three guests and let us just say this was a huge hit! Everyone loved it. I omitted the cabbage (yuck) and substituted mushrooms. Yummy! I will be making this again. Thanks!

Aussie Chicken

Excellent recipe! Something different is always great. Cheddar's has a very similar honey dijon chicken served over a bed of rice, so I did the same. Used Grey Pupon (probobly mispelled). Did not change a thing and will be making this again. Thanx!

Fried Ice Cream

I'm not rating this only because it was my mess up. This is by far my biggest flop of a recipe. You need your freezer on suppppperrrrr cold setting. The ice cream never hardened enough. When I touched them to roll they melted almost instantly. I coated twice quickly but it was a disaster! I even froze them before rolling for almost a full 24 hours. Moral of my ranting, deep freeze or coldest setting. I will try again.

Easy 'Charro' Beans

Ok I have to give it 4 stars because everyone at my mexican dinner party loved them. I served with Chicken enchiladas II from this site (amazing by the way). Personally I was not that crazy about them. I think it was my mess up though. I had a friend go to the grocery store for the items and she brought back everything correctly except brown sugar baked ham. I wanted normal regular ham. The brown sugar gave it a funky flavor. The entire batch was gone by the end of the night so I will try to make again.

The taste is wonderful. Next go around I will add more sauce. It was a little dry. I used ricotta cheese instead of cottage cheese because I hate it so much. I also doubled the recipe for a dinner party and everyone loved it. Will make again but add more sauce. Thanks!
