I used boneless pork chops that were on sale, cut them up and marinated. With the prices at the grocery store pork loin was out of the question! Pork chops did beautifully. Great recipe, everyone raved on and on.

Easy Morning Glory Muffins

MMMM Made this morning with a few adjustments to make them a little healthier. I used whole wheat flour, substituted 1/2 C oil with 1/2 C applesauce, and only used 1 C sugar. I grated apple without peeling it, added chopped dates, the zest of an orange, and used the juice from the orange to make a thin glaze for the tops after I took them out of the oven. My husband, son, and I loved them.

Almond Chicken Salad

I doubled the sauce and served as lettuce wraps. Excellent dish. One word for those with kids.......the mustard made it too spicy for my friends kid but my kids loved it. If you have an overly picky kid, reduce mustard powder.

Quick Lemon Dijon Chicken

Ahhhh to "Dijoniieee." I was expecting a creamier sauce. If it means anything, my husband loved it. I think I will be trying a honey Dijon next time.

Not really what I had in mind when I pulled this recipe. The ingredients are great but the texture of the final product was not what I expected. I will be making these again but pan frying in olive oil. It adds calories but oh well.

Portobello Penne Pasta Casserole

I had to tweak this recipe a little. We had no spinach and one of my roommates is allergic to milk. I put in green bell pepper, onions, and broccoli instead of the spinach. I also used soy milk and fake cheese for substitutes. Despite all this it came out very good. My roommates are both picky and they loved it. Personally I loved the soy sauce in it. About the only down side to this recipe is that so much "cheese" makes it very rich, also there is the danger of stuffing one's self to the point that they can't move. :P

Apple Ladybug Treats

Very cute recipe that I put into my roommates' bento lunches. The only downside to this is that you can't refrigerate them. The pretzels get soggy form the apples and break, also the apples brown. Eat them the same day and they are fine however.

Grilled Roasted Red Pepper and Ham Sandwich

Hubby and I loved them. I had honey turkey so I used that. The only issue I had was the parmesan cheese, it burnt instantly. Other than that, great recipe. Next time I will use a pannini bread.
