Buttermilk Pound Cake II

Reviewed: Dec. 18, 2008
I made this cake to put into my Christmas Goody Bags and I was only kinda happy... When I pulled it out of the oven after exactly 1 hour, it looked beautiful...all puffed up and golden and pulled away from the sides perfectly....I was very careful setting it on the countertop. I walked away and left it for 10 minutes... When I came back my cake had totally fallen!!!! :( So I thought "Well...that side is on the underneath once I flip it anyway" So I flipped it onto a wire rack and sliced it after another 30 minutes Its super moist and very delicious!! It just looks a little funny UPDATE: I made this again after re-reading the recipe and seeing that I was supposed to leav it in the oven for 90 MINUTES not 60 !!, so this time I left it in a half hour longer (DUH). The sides were a tad darker (not much) but it was fully cooked all the way through and did not fall. Very VERY delicious. Also, I spray the bundt pan with PAM then sprinkle it with granulated sugar instead of flour, works beautifully and gives the cake a slight crunch and a sweetness :)

Haystacks II

Reviewed: Dec. 18, 2008
My husband LOVES butterscotch, and these are some of his favorites! I made these and put them in my Christmas Goodie Bags. They are a fab addition to lots of cookies and chocolate, quick and easy to make. I melt my butterscotch in a metal bowl atop a pot of boiling water (double boiler) and i make sure the water is simmering only. if it is boiling and the water is touching the bowl you have it up TOO HIGH. Constantly stir until your chips are melted and them dump the rest of the ingredients and stir. The tricky part is probably forming them onto the cookie sheet with parchment paper....just use two spoons and push them onto the tray yummy and easy!!!

Sopapilla Cheesecake Pie

I have been making this recipe for years, the only difference in the recipe I use is, it doesn't call for honey. This recipe is soooo easy, delicious and inexpensive to make. I make it for Charity bake sales and double to recipe to make several 8x8 pans that are ALWAYS the first to go at the sales. A true "go to" recipe anytime you have a gathering or function.

Easy Slow Cooker Ham

Reviewed: Dec. 11, 2008
I normally use a basic ham recipe where you put the ham in the slow cooker and add a few handfuls of brown sugar SET and FORGET the ham turns out beautiful. Well, for my husbands birthday I wanted to make his favorite meal (Ham and mashed potatos) but I didn't want it to be the same ol ham I always serve him. So i made this!! WOW!! JUST what I was looking for. Its a "fancy ham" as he called it. SO yummy SO easy. A keeper and I will definetly be making again SOOON

Slow Cooker Ham

Reviewed: Dec. 11, 2008
Awesome! I used a no bone, sliced package of Kentucky ham that you buy near the bacon and hot dogs. I think it was called picnic ham or serving platter ham There was about 2 pounds in this package. I threw in the ham and a couple handfuls of brown sugar (did not even measure) and put it on low for about 3 hours THATS ALL THE TIME YOU NEED DO NOT OVERCOOK OR YOUR HAM WILL BE TOUGH AND YOUR LEFTOVERS WILL BE WORTHLESS AND CHEWY!!!! YUMMMMMMMMYYYYYYY!! My husband loved :) We ate it on sandwiches the next day, a Ham Egg and Cheese buscuit for beakfast and I chopped up the veeeery last bit and added it to the Delicious Ham and Potato Soup form this site!! yumm yummmm

Orange Fluff I

Reviewed: Nov. 29, 2008
This recipe is great!! Very easy to put together, made it the night before Thanksgiving. I think next time I will add some walnuts or pecans. I used black cherry jell-o because it's what I had on hand and it turned into a pretty pink fluff that everyone liked, including my husband who is not a cottage cheese fan.

Corn Pudding IV

Reviewed: Nov. 29, 2008
I made this for Thanksgiving and followed the recipe exactly; it was quite disappointing. The "pudding" had a watery texture and it was very bland tasting. I could have just served buttered corn and it would have tasted better. I am sorry to say I won't be using this recipe again.

Sweet Potato Casserole II

Reviewed: Nov. 28, 2008
Leave out the orange juice and you have the perfect straight-up sweet potato dish! On theory the flavors SHOULD be good together, but in practice it's just a little off. Without it, though - homey goodness on a spoon, covered in marshmallows... what's not to love?! I use one 29oz can, smoosh them up with a potato masher (leaving some lumps) and add back approx 1/4 - 1/3 cup of the canned syrup until they're not quite so stiff. I'm pretty generous with the "cinnamon" (which in my house is actually pumpkin pie spice) - a good 5-6 shakes. With one can, you'll fill a pie plate rather than a 9x13 dish. I'm dying to try the streusel topping that MomSavedByGrace added to her review, but it's definitely yummy without it!

Beth's Spicy Oatmeal Raisin Cookies

Reviewed: Nov. 26, 2008
Okay, at 35 yrs old I am JUST learning to cook beyond the microwave, so mistakes are likely. FIRST LESSON: I forgot the flour (how does THAT happen!?!) and found a sticky oozing mess when I checked the first batch. SECOND LESSON: the recipe does not specify (for us beginners) to use salted or unsalted butter. I used salted and the additional salt. My suggestion to others like me who do not know better is to use one or the other, not both. THIRD LESSON: This recipe is a little sweet for me (it tastes "store bought" sweet) so I may try to cut back the sugar next time. FOURTH LESSON: Cutting back the baking time to about 10 minutes saved me from hard cookies, but now I find them chewy. ADDITIONS: 1/4 tsp Cardamom for depth to the spicy flavor. YUMMY even if a tad salty and chewy!

Chocolate Cherry Cake III

One of the best, quick and easy chocolate cakes I have ever made. Everyone raved and asked for the recipe, and requested a repeat performance. Only changes I made was to add 1/3 cup of oil. I Don't normally rate anything a 5, but this recipe is well deserving.

Easy Slow Cooker Ham

Reviewed: Oct. 23, 2008
We tried this last night. I followed the directions, which were easy enough, and used an uncooked picnic bone-in ham. The meat was tender, but the flavor was too overpowering for our palates. The house smelled like Christmas, but the ham itself had too much of a "floral" after-kick that didn't seem like it belonged in the meat. While this recipe seems to be a favorite with a lot on the site, it just wasn't a set of flavors my family was used to, and that probably put them off. Sorry :(

Garlic Chicken Stir Fry

Reviewed: Sep. 8, 2008
I thought that this was delicious! It was easy to make too! Tasted like the garlic chicken I get at my fav chinese take out place- only better!I omitted the cabbage and green onions (didn't have these on hand) and used broccoli and carrots, snow peas, 1 onion and red bell pepper. I thought that it was a perfect amount of garlic and ginger, but my young kids did think it was a bit too spicy, so next time I'll use a little less. I'll definately make this again!

Zesty Porcupine Meatballs

Reviewed: Sep. 3, 2008
My mom used to make porcupine meatballs when I was little, but I could swear the sauce was creamy, not tomato-based. These are good - lots of flavor, and my kids really liked it served over couscous (added a bit of the parsley and the onion salt to the cooking liquid). I was going to make this with one can of tomato sauce and one of soup, but because I'm a goober and forgot to hit the soup aisle I used one can of seasoned tomato sauce for meatloaf (yes, it's actually called that - a Hunt's product, I think) that I had kicking around the back of the pantry for who-knows-how-long instead. It did have a meatloaf-y hint to it, but it was very tasty and very homey. This would be great comfort food on a chilly evening, but we enjoyed it just fine on a warm Texas night, too! Be sure to really finely chop your onions because even 1/4" dice looks huge when the meatballs are barely over an inch! Next time I'll get the Pampered Chef handy-chopper out and just go to town on that little chunk of onion! Oh, and be very generous with the tomato-whatever - I used the seasoned sauce - in the egg. That's the flavor on the inside of the meatball, and more is better (as long as they still actually hold together, that is)!

Fresh Peach Cobbler II

Reviewed: Aug. 26, 2008
The filling was great. Tossed it with a little flour per previous suggestions. Also sprinkled extra sugar, brown sugar and cinnamon on topping but it just wasn't very good in general. Am trying to find some kind of streusel cobbler topping...none of the batter ones I've made have been very good. oh...used 8 fresh peaches and it made a big 9x13 pan..glad I didn't double the batter.
