Haunting Hot Chocolate

I loved this recipe. I looked all over the web to find something with minimal ingredients that would also be tasty. Being a missionary in a foreign country can sometimes prove difficult with I can't run down to the local Walmart to pick up ingredients so I love finding recipes that are easy with few ingredients. This was a great recipe. It reminded me of the hot cocoa out family always gets at a local amusement park in Texas when we're home for furlough. I made one fop-pa, I used full fat powdered milk and it was not a pretty site. The taste was great but I couldn't get the milk to dissolve all the way. After a full day of snow my family loved this cocoa with a ton of marshmallows piled on top. Thanks for a great keeper!!

Creamy Chicken and Rice

This was the BEST chicken and rice casserole I have ever eaten. I have tried all kinds from artichoke to poppyseed and everything in between. I steamed the rice in a steamer with vegetable broth and that added a nice boost of flavor. I also poached the chicken in vegetable broth. In a pinch you could easily use a pre-cooked rotisserie! Thank you for a great recipe!!!

Rich Mexican Corn

This was delicious! I am always wanting a side dish with mexican food other than rice and beans and this ( and calabacitas) are my new favorites! I took adivce from a few other reviewers and altered this dish to suit my family's tastes ( we have 2 toddlers, so I can't make anything too spicy) I used most of a small can of green chilis, some diced red bell peppers, onions and garlic to add flavor, and it was so great! I will make this time and time again, and make it super spicy when the kids are not around!

Chuck's Favorite Mac and Cheese

I like my mac 'n cheese gooey and with the amount of bread crumbs called for it turned out a bit dry. We used more cheddar cheese to try and compensate but still not as good as other mac 'n cheese recipes I have. If I do make again it will be one of the versions other members posted.

Chicken Flautas

I am putting together a Tex-Mex dinner for Christmas Eve and wanted to try out this recipe to see how it would fare. First, the amount of oil does need to be increased so take the advice other members gave. Second, the chicken mixture is soo simple to mix and tastes great...easily adjusted for spicier tastes. Third, I allowed them to cool about 10min and cut them in halves and they maintained their shape beautifully. We are going to serve them stacked this way with dips for our guests. A perfect recipe for hostesses short on time!

Not Your Average Grilled Chicken

Only okay. I was not impressed with the sour cream mixture...it was just too bland. The directions for removing the back bone were great and easy as I had not done this before. Would cook this way again but only with a different seasoning mixture.

Coconut Ghost Treats™

Big waste of time. THis recipe is getting 1 star because the method is not tried and true...The ghosts were impossible to shape! We put butter all over our hands to help form them and in the end made rice Krispy treats in the shape of balls and decorated them that way.

Lentil Soup

A great soup to add whatever fresh vegetables you have on hand to. My sister enjoyed it so much that she took my left-overs home with her! Stayed good for a week and the recipe was simple...I wouldn't change a thing!

Honey Curried Roasted Chicken and Vegetables

Love this recipe! I make it very often, my dh, who wasn't sure at first if he would like curry, has now claimed this as one of his favorite dinners. I throw in all sorts of vegetables and the honey-curry combo is devine with tomatoes, potatoes carrots, and celery. MMmmmm

Courtney's Multi-Purpose Mexican Chicken

Just so everyone knows, the cooking time should be adjusted depending on how much chicken you have, it can take as little as 3 hours. Also, you should put a buffer between the chicken and the bottom of the crockpot, I use sliced onion that I pull out later. One last thing- I always use the recipe taco seasoning 1 from this website, rather than a packaged taco mix that has lots of sodium and preservatives in it!

Jay's Signature Pizza Crust

This was a really good recipe. I added a tsp of Oregano, 1/2 tsp. of garlic to the wet ingredients before adding the flour. It was a really soft crust and the family has kicked the old recipe out and replaced it with this one. Oh yea, it would be expedient to cook the crust for about 10 minutes before topping it, worked great for me! Thanks Jay!

Garlic Pita Bread Bites

Added 2 tbsp of olive oil and garlic salt along with minced garlic from a jar instead of fresh. Soaked the bites in a baggie with the mixture, then baked 3 minutes and flipped for the last 2 minutes. They were crisp on the outside and soft on the inside. Paired well with Greek Lemon Chicken Soup.

Greek Lemon Chicken Soup

This was an absolutely yummy soup. A rendition of chicken rice soup, but better. I highly recommend not keeping lemons in for too long, as they make the soup bitter from the rind. I added 1 tsp. of Greek seasoning as others suggested and it gave it a nice kick. Also used instant rice to have it sooner. I will make this again, and again.

Red Potato Bites

Sausage Gravy

Yep, this is it! I never had this growing up - this is something I learned about after meeting my (Texan) in-laws... and I was an instant fan. I giggled when I read the "you can add some sausage back in" instructions because I always make this with at LEAST half a pound of sausage in the gravy. Chunky is better! I know some recipes call for sage sausage, and even though I have a love affair with maple sausage, I wouldn't use anything but plain for gravy. Just too darn good to mess around with it! If you're looking for a biscuit recipe to go with, try Mom's Baking Powder Biscuits here. Not fancy, just delicious and easy. Enjoy!

Mom's Baking Powder Biscuits

Exactly what I was looking for! No-screwing-around plain old breakfast biscuits... and really good ones, at that. Hey, I love an orange-scented twice-sifted fancy-pants gourmet biscuit as much as the next girl, but sometimes you just have to get back to the basics - and this is it. I made these half an hour ago, and they have been eaten with just butter, whipped honey-margarine, grape jelly, actual honey, and with a sausage patty for a sandwich... all delicious. They are light, fluffy, soft inside and just awesome. I made mine with unsalted butter (and left the salt as written, but probably should have increased a tad), 1 full Tbsp of baking powder, and did not dip the biscuits AND! I didn't realize we were out of milk, so I used a powdered buttermilk product with water per their instructions. These were perfectly done at just 13 minutes, so check at 10 and then watch closely - biscuits turn color very rapidly at the end. FYI, these were not the layered flaky style of biscuit, although I did knead at least 20 turns. I'll try the butter-flavored shortening sometime to see what that does differently. Give these a try!! Now get off my computer so I can go eat more biscuits. :D

Fried Chicken Tenders

Okay so I'm actually reviewing the dipping sauce. I made my usual tenders and then used this dipping sauce, which I added about a TBSP and a half of ketchup to. With the addition of the ketchup the sauce tasted like the dipping sauce at the Outback. Thanks, this sauce is a keeper!
