Roasted Rack of Lamb

Fabulous recipe! It's very simple to put together and the results were excellent even though we used dried rosemary and granulated garlic. My husband has eaten a lot of lamb and he raved that this was the best he's ever had! For a 1.40 lb, 7-rib rack, searing + 17 minutes in the oven produced a medium-RARE roast (some deeper glossy red in the center). I strongly recommend a digital instant-read thermometer when making this recipe Also, if not working with an oven-proof skillet, have your roaster pre-heated in the oven for immediate transfer.

Pizza Crust I

Awesome and Easy Creamy Corn Casserole

Bou's Chicken

I can't make this enough. My family eats it and fast. Even when I make extra, it goes to school and to work with everyone. The sauce is beyond discription and when you serve it on rice, it is amazing. To any of you who have not tried this, it is somewhat like sweet n sour chicken but BETTER!!!

Stephan's Broiled Salmon Pesto

Shazaaaaam!!! My family loved it. My husband doesn't like pesto and my son isn't big on fish dishes but they couldn't say anything bad about this one. I have to admit, slathering on pesto sauce as thick as this is a bit unnerving but when they tasted it and their eyes lit up.... it was all worth the anguish. I followed the recipe exactly!!! Everyone was wrinkling their noses as I prepared it and just knew it would "suck" but as soon as my husband tasted it, he said "Wow, what a great flavor this has". Thanks Stephan!!!

Acapulco Chicken

I used Pam instead of olive oil, sprinkled liberal amounts of cumin and garlic and when I removed the chicken from the skillet, I added about 1/4 cup of water and more or less steamed the veggies which brought more of the flavor into the recipe then had I sauteed them. Not to mention it is much healthier than more oil. I added the chicken to the veggies and served over steamed rice. Plopped a nice helping of fat free plain yogurt ontop and my family went nuts. This is a great recipe and nothing was missing except maybe some tortilla chips. They, however, are not on my diet.

Tres Leches (Milk Cake)

This cake tasted good, but the milk mixture made WAY too much. I used half of that mixture; any more would have made the cake soggy. Also, I didn't end up with 3 layers, and I followed the recipe (although I skipped the whipped cream part and used chocolate frosting instead).

Chicken Enchiladas I

Honey Garlic BBQ Sauce II

I absolutely LOVED this barbecue sauce! I made a few slight changes: I only used 2 tsp. of garlic; I didn't have any molasses, so I used light corn syrup instead; omitted the Cajun seasoning; used Tabasco Chipotle sauce instead of the hot sauce. Yum!

Beth's Chocolate Chip Cookies

I read some of the reviews to get an idea of what to expect. I noticed some found the mix dry, so I made certain to spend extra time creaming the fats and sugars, then added the eggs one at a time, to ensure a creamy mix. Then I added the flour mixture a little at a time to be sure it didn't get too dry. These are really great cookies! I will definitely be making these again!
