Sweet, Sticky and Spicy Chicken

This was sweet and medium spicy, but the soy saltiness was way too strong for me in this dish. Seeing this was an asian type dish I used Thai sweet red chile hot sauce, but then also used 1/2 of the cayenne pepper sauce called for, louisiana style hot sauce. I used ginger paste from a jar. This was good but needs a few tweaks to make it great.

Chicken Continental

This was delicious! What a great family pleaser too. My husband loved that this was comfort food on a cool fall evening. I cut my chicken into strips and added a half can of cream of mushroom soup as well. I used canned portabella mushroom pieces drained. I added a good tsp of chicken bouillion granules with the water and used long grain uncooked rice. I just simmered this about 30 min and it was fantastic. The rice got a little brown on the bottom of the pan, but that was my favorite part! Thanks, very good dish.

Chicken Pot Pie IX

This was amazing! I used 2 small potatoes, cubed, in addition to the other veggies. Also, I baked the bottom crust for 8 minutes at 375. I also used poultry seasoning and garlic powder and more milk and more broth. (I thickened it by cooking longer) I also used broth to cook the chicken and veggies. I used egg wash for the crust and made pretty leaf deigns with the pastry!

Pork and Green Chile Casserole

I had some peeled roasted green chile left over & didnt want it to go bad, so i gave this recipe a shot. Since i didnt have instant brown rice, i cooked some of the normal kind in a pressure cooker for 18 mins and added it to the casserole (nixing the additional water). The result was a very nice burrito stuffer.

Beef Enchiladas

This was nice that it used things I usually always have on hand to prepare. I used corn tortillas because that's tradition. Instead of canned green chiles I used 1 frozen Hatch green chile from my freezer and chopped it up still frozen. The sauce had a really nice flavor. It was similar to a marinara rather than a chile flavor sauce. It was thicker than I thought it should have been and a little sweet. The overall dish was a little dry though and needed more sauce. I cooked the meat with some chopped onion and garlic and added a little comino for flavor. We all liked this okay and agreed we would eat it again if prepared, but have other recipes we like much better.

Rasta Pasta

Spicy, flavorful pasta! I used the blackening spices as a dry-rub for grilling the chicken breasts on a George Foreman grill. I let the meat rest for ~10 mins while sautee'ing the vegetables, then i cut the chicken breast into bite-size pieces and added them to the vegetables. I had sun dried tomato pasta sauce on hand, and it seemed to go very well. This is a dish that is even better as leftovers.

Whole Grain Banana Muffins

SO glad to find a healthy banana muffin recipe... and YUM… totally stuck to the muffin papers, but so delicious… I used oat/rye flakes in lieu of oat bran… shoulda added ground up flax seed, but didn’t remember to. Added some brown sugar and instead of raisins added cranberry/apple/carrot chutney. Used all yogurt instead of sour cream, made applesauce from scratch and one egg instead of egg whites. Came out fantastic! Might make a great bread... and would totally eliminate the sticky paper situation! I added a cream cheese icing (not healthy!) since they're a b day treat at my daughter's school... and sprinkles, of course... she's 3! :)

Ruby Drive Sloppy Joes

Oh WOW! Spicy hot tangy sweet rich tomatoey YUM. These are sooooo good. I used ranchero salsa and louisiana hot sauce. I added 1 more spoon of sugar to balance the heat. I did add a tsp of minced garlic to the meat as it cooked and about half tsp of chicken bouillion granules and 1/3 c water. I had to simmer this though for an hour to get it thickened. Edible but a bit on the hot side the way I made them maybe louisiana hot cayennepepper sauce isn't the type meant here? Either way, they are delicious!!!

Mushroom and Swiss Chicken

Don't mess this dish up like I did by using creole seasoning as it turned out way too salty. I was out of cajun spice so I didn't think it would matter. Next time I will look up a recipe for homemade cajun seasoning salt free. Otherwise this would have turned out pretty good. I used double the garlic as we love garlic.

Savory Herb Rice

This was alright but it wasn't impressive. I'd eat it again, but there are a lot of other rice dishes I'd prefer. The herbs were strong and it isn't a mild side dish. This was simple and not bad, overall a dish that is fairly versatile, like I said I'd eat it again. We had no leftovers here.

Spicy Melted Cheese Dip

This was pretty much just rotel dip with meat. It was good though, but not spicy. If you want it spicy you need to use the "hot" blend of rotel canned tomates with chiles. I used leftover taco meat instead of ground beef since I had it available and was looking for new ways to use it up. This was good enough to make again.

My Crab Cakes

1st time for me to make crab cakes from scratch. Used recipe as a guide and the cakes turned out delicious. I did have to substitute what was on on hand for some of the ingrediants: Club crackers instead of buttery round Prepared mustard for dry Italian seasoned bread crumbs Real chopped garlic instead of garlic powder
