Cream Cheese Cookie Cups

These are SO good and pretty easy. One tip, GREASE your pan. It makes it so much easier! I put mini chocolate chips on top of mine. YUMMY!

No Bake Cookies I

Middle Eastern Cumin Meatballs

Great garlicky flavor in these. I didn't have tomato paste so I just used beef stock for the water and some mexican tomato sauce (Del Fuerte brand) that I had opened in the fridge. The sauce all simmered away though during cooking and there was none to spoon over the meatballs or rice, so next time I will double it. I did add a little flour/water slurry right at the beginning to help thicken the sauce up a little. Really good, I enjoyed this quite a bit. I served this with Jeera (cumin) rice. Thanks for the great recipe, I'm making this again.

Jeera (Cumin) Rice

Lots of nice flavor in this dish. I used Basmati rice and it turned out perfectly. I served this with Middle Eastern Cumin Meatballs and it was a great pairing. I'll definitely fix this again. Thanks for the wonderful recipe!

Simple Salisbury Steaks

This was okay and we ate it but I didn't like it at all. Too oniony for starters. I had to add some beef stock and some milk to think the soup to make a gravy. No way was it going to boil for ten minutes with the soup if I hadn't. These fell apart easily and I had to be really careful when moving them so they wouldn't break apart. Don't bother making this dish as there are much better recipes here with as little effort required.

Enchilada Stack

This was really good. Better than I had expected actually. I used Gebhardt Chili powder and I do think the brand and type used will make a difference in the way your filling tastes. I doubled it though since there was only a tiny bit left and I didn't want to put it back on the shelf. I doubled the garlic in the meat too and used dried minced onion and mexican tomato sauce which is seasoned a little. Del Fuerte brand is what we have available here. I used flour tortillas since I don't know how to make corn ones. My filling simmered on the stovetop while I made the tortillas for this. I used an American/Cheddar cheese blend since Cheddar tends to be really greasy when it melts down. Thanks, I will make this again!

Homemade Flour Tortillas

This was super easy to do and these turned out great. I scaled this down for only two servings and got 4 tortillas from it. These aren't as good as the ones the ladies at the taqueria make, but are better than store bought and faster than a trip to the store. But maybe that is just their years of experience that makes them better tasting. Great recipe, thanks!

Skillet Enchiladas

This wowed my family. I made "ten minute enchilada sauce" and used a Hatch chile diced up straight from my freezer instead of the canned since I don't keep those items on hand. I cooked all the meat with dried minced onion and chile in the skillet until it was brown and then divided it up for the filling and the sauce. The chili gravy was really good too although I used a little more enchilada sauce than called for since I had a little extra. I just rolled these up and placed them on a plate then topped with the gravy and microwaved them to melt the cheese on top. Thanks Regina, my family has full happy tummies now!

Honey-Garlic Glazed Meatballs

This was really tasty. A bit too sweet though. It wasn't garlicky though like I expected. The next time I will double the garlic and add some garlic to the meatballs as well. I served this as a main dish over a bed of steamed rice. It was very good and we enjoyed this dish. Thanks Marion, we thought these were great.

Broccoli Casserole I

I used to have a recipe similar to this, but I lost it and this is the closest thing I can find. This was a big hit at our thanksgiving potluck (I didnt even have leftovers to bring home). I used whole grain rice, and one can cream of chicken/one can cream of mushroom (just because thats what I had). Next time I think I will add either more broccoli, or some cauliflower, because it was just a little too saucy for my taste. Thanks for a good recipe.

Chicken Spaghetti Casserole I

I used what I had on hand, but this would have been great even if I didnt change anything. It is so adaptable to whatever you have around the house. I used onion and celery sauteed in some butter and added that to a can of cream of chicken soup, 1/4 cup milk, the cooked pasta and cooked chicken, and about 1 cup of shredded italian blend cheese. I seasoned with salt pepper garlic and celery. I added a little more of the cheese on top. I cant wait to go home and eat the leftovers for lunch!

Ken's Texas Chili

This was okay for homemade chili especially if you need a recipe that is onion, pepper, and tomato free. Way too many beans though. I was really heavy handed in measuring my spices. This was a mild chili and we would eat it again, but it didn't make our favorites list. I didn't have pintos so I used dark kidney beans. For my personal tastes this could have used double the spices. Thanks Ken, your chili was good. We had no leftovers. The Hungry Teen had seconds.

A Simply Perfect Roast Turkey

Oh yeah! This is a simply perfect turkey. I had a 12 lb. turkey so mine was done in 2 hrs. at 350* I cut slits in the turkey skin and stuffed it with the bits of butter instead of rubbing it on. I sprinkled it with poultry seasoning too, but forgot the salt and pepper. I used 1 1/2 cans of chicken broth and only basted it once. I did cook this in a roaster with the lid on. It still got a beautiful golden even with the lid on! Thanks, I got lots of Mmmmmms. My husband even said I outdid myself this year and it was the best turkey yet. Easy Excellent recipe!!!!

Fabulous Wet Burritos

This was a huge hit here. I used dried minced onion, 1 Hatch chile pepper diced, instead of the canned, and homemade chile gravy sauce from the "tex-mex beef and cheese enchiladas" recipe instead of making this sauce since I don't keep canned chili or enchilada sauce in the house. This was really quick and easy and my husband is looking forward to what little leftovers there were for his lunch tomorrow. Thanks, he said please make this one again, and SOON! He wants me to serve this over the holidays when family is here, it's that good. I would have given 5 stars, but since I used homemade sauce instead of the recipe that wouldn't be fair and accurate, but it was worth 5 plus stars the way mine turned out. Judging from the high ratings and small changes lots of reviewers made, I'd say this recipe is a winner for it's versatility and adaptablity to any cook and kitchen. So... many thanks!

Hawkeye Pork Roast

Nice flavor, lots of pepper but I used fresh ground so I think it came out a little stronger than if you used pre-ground. This was a nice simple meal and tasty. I ran out of garlic powder and used minced garlic but it made the resulting paste harder to work with than I think a rub would have been. Still it tasted great and my husband is looking forward to the leftovers for lunch. Thanks for sharing this, we really enjoyed our meal.
