Blackened Tilapia with Secret Hobo Spices

Holy Hades, That was too hot for me...I did use Hot Hungarian Paprika at the suggested amount...I'll probably just buy a rub next time. It was great learning how to blacken fish, though.

Wisconsin Native's Beer Cheese Soup

WOW. This was yum. I understand that some people may think a dark beer is not to their liking (Some people just dont like dark beer.) And, there are some people who would taint the fine bouquet of a good cheddar with Velveeta. (Shame.) But, I liked it just the way it was and so did the other 26 people I fed it to. (Wasn't a drop left, infact one guy was putting away the pan and licking it all the way there!) Great Recipe. When the soup outshines the main meal you know you got a winner! ..... and on a side note, cut up ham would really make this a *meal*.
