Molasses Sugar Cookies

Reviewed: Dec. 22, 2009
I dipped these in colored sugar for Christmas, and they were quickly gobbled up. I made the dough and then refrigerated it for 2 days before I got around to baking them. Baked for 9 minutes for slightly chewy cookies. Will definitely add to the cookie rotation.

Campbell's Kitchen Beef Stroganoff

Reviewed: Dec. 22, 2009
This was very good and fast to the table too. I used another half can of soup though as it was really thick and added a splash of milk. I stirred the pasta right in. My family loved this dish. I used ground beef instead. Thanks!

Chocolate Coated Peanut Butter Crackers

This was a huge hit! I used semi sweet chocolate chips and added in a spoon of crisco as I was taught. Dipped these by hand, messy but easy and a good addition to the candy cookie tray.

Enchiladas

Reviewed: Dec. 22, 2009
This was a really nice change for a beef enchilada. There was too much sour cream/cheese though, we all agreed on that here. I only used 1 lb. of ground round and I got 14 enchiladas from this so I can't imagine how anyone could only get 6. I made two pans. I used Lawry's brand taco seasoning and some roasted Hatch chile I had in the freezer. I didn't have yogurt so I used sour cream. Also no mozzarella so I used a four cheese mexican blend. I used freeze dried chives and a couple of shakes of onion powder since I didn't have green onion. This had a great flavor and were tasty. The Hungry Teen though didn't like these and only rated it a 3, which means "edible but don't serve it again" in our house. Maybe the sour cream sauce just didn't work with the beef for us.

Bacon Roll Ups II

Reviewed: Dec. 21, 2009
Many, many stars! My family inhaled these bacon roll ups! When you think about it, it doesn't seem like the ingredients would work. But, it does and its fantastic. I added a little garlic powder and salt, shreddard cheddar and chives to my cream cheese. Then, on half of the bread, I spread on the cream cheese mixture, rolled it up, then sprinkled brown sugar on my bacon and wrapped it around the bread and secured w/a toothpick. I'm not sure if it was the type of bacon I used but mine did drip. I will definitely use a broiler pan next time b/c it made a mess in my oven and we had to open windows from the smoke, lol. Totally worth it though and I'll be making these again!

Real Texas Chili

Reviewed: Dec. 20, 2009
Perhaps I'm not used to chili without onions and tomatoes, but I'd have to make up a brand new name for this concoction. It's not like any chili I've had anywhere ... including Texas. I like the flavors, but it doesn't work as a stand alone dish.

Tiramisu Layer Cake

Reviewed: Dec. 19, 2009
A real hit at our holiday dinner party today. A little time-consuming, but well worth the effort...pretty presentation. I "made" the marscarpone from the recipes posted by other reviewers, but otherwise followed the recipe. Used "heavy whipping cream" instead of heavy cream, as that was all I had available. Watched the beating time, though, and it turned out great. Will do again. for special occasions.

Walnut Pear Coffee Cake

Reviewed: Dec. 19, 2009
This recipe is great. I made it to take to a Christmas luncheon and there was only one small piece left. My husband said it was great. My springform pan is only 8-1/2, so my cake took longer to bake. I also added a cup of oats to the recipe and I used fat free sour cream. I baked my cake for about 1 hour and 20 minutes. I'll make this one again.

Traci's Chicken Noodle Casserole

Reviewed: Dec. 18, 2009
This was basically tuna noodle casserole with chicken instead. Very good though. We all had more than we should have. I used dried minced onion 2T that I added in with the chicken and sauteed it in butter. I did toss in some peas to this. I drained 6 oz cooked hot pasta and added the milk, 6 oz velveeta, celery soup and cream of chicken soup and then heated it through before adding it to the baking dish. I topped this with french fried onions as per another reviewer's idea and it was really great! I did let this stand about 15 min after coming out of the oven. We'd eat this again. Thanks!

Southwest Stuffed Chicken

Reviewed: Dec. 18, 2009
I really loved this recipe and my mother, who can be incredibly picky at times, loved it as well! I probably used a hundred toothpicks to keep it all together but it was worth it! I took naples34012s suggestion to not coat it in flour and I agree that it wasn't necessary. I also substituted rotel for the chopped green chilies and a colby monterey jack blend instead of just regular monterey jack. This is a wonderful recipe and I plan on using it for many years to come! ^.^

Potato Bacon Chowder

Reviewed: Dec. 16, 2009
This was a great soup for a cold rainy night. It was a fast meal to the table and had great flavor. I was out of celery so I used some celery seed and celery salt and used dried chopped onion, about 2T worth. I did use 3 cups potatoes since I only had 1 potato left and wanted to use it up. While this was hearty and good on it's own, a big helping of some shredded cheddar made it even richer and better tasting. I used precooked bacon so there were no drippings in this. We all enjoyed this, thanks for sharing, it was a great meal!

Angela's Awesome Enchiladas

Reviewed: Dec. 16, 2009
Pretty dang tasty!I've never made enchiladas before. I followed the recipe with a few exceptions that didn't affect the outcome adversely. I used the AR recipe for Creamed style Soup mix in place of the condensed soup. I also omitted the green onions and chopped green chilis. The taco seasoning packet was labeled "hot" and my daughter had to be able to eat dinner, too. So had to leave out those chilis. I also had no canned enchilada sauce. I used an AR recipe for Red Enchilada Sauce. I served this with Spanish rice. It seemed like a lot of work but dinner was delicious! Thanks for this awesome recipe!
