Delicious Ham and Potato Soup

I think I will be making this every week maybe even twice. This is the absoulute BEST potato soup ever. Very easy to make. I tried to follow the recipe exactly, but ended up having to add a tsp of flour and a tbs. of butter. I thought it was never going to thicken up, but then I turned the heat up, and it didnt take long at all. I wish I could add more stars as this recipe definitley deserves it. : )

Buttermilk Pancakes I

This is now my go-to pancake recipe. It's fantastic and the pancakes really are light and fluffy. I tried leaving out the baking powder once and it changed the flavor and composition too much. Pour in a bit of batter and shake the griddle to thin them out in the pan and you shouldn't have too much trouble with them cooking all the way through.

Simple Savory Pork Roast

Because I used a 5 lb pork roast, I just doubled the ingredients. I followed the advice of others and rubbed it with olive oil to help the spices cling to the meat. Also, I used dried rosemary rather than fresh (just used a pinch more), and I threw in some oregano. Overall, very tasty!

Country Fried Steak and Milk Gravy

Easy Biscuits

This is a great recipe for beginners. I have never made biscuits from scratch and was scared to death even thinking of it. They reminded me of my mom's and my grandma's homemade biscuits. I love it!

Speedy Salmon Patties

Great recipe I did change it up though. I added about 5 extra cracker's, teaspoon of lemon juice, and a tablespoon of Heinz 57. Turned out great the Heinz gave it just the right amount of flavor without overpowering it. I think next time I will put some flour on the outside for a crispier crust.

Spinach Dip with Water Chestnuts

I Love this recipe. I did't have Mayonnaise this time so I used Miracle Whip, and I definitley don't reccomend it. I'm going to try to salvage it and make ham pinwheels in the morning with it I will let you know how that turns out. UPDATE: I ended up adding an additional cup of sour cream and about 2 more oz. of spinach, and it turned out great. Everyone said that they loved it.

Cream Cheese Sugar Cookies

I don't know what I was expecting with this recipe, but I did not get it. The dough was very difficult to work with and the cookies just didn't have the zip I thought they would have. It wasn't a bad recipe, by any means, but it did fall flat of my expectations.

Holiday Pumpkin Bread

I made this bread for Christmas presents this year and received rave reviews! My only complaint is the bake time. My bread turned out a bit on the dark side, so I think I would decrease it by ten minutes. Other than that, it was beautiful and very tasty!

Oven Roasted Red Potatoes and Asparagus

My boyfriend and I made this recipe a part of our date night this week. It was wonderful. I read some of the reviews that mentioned it had too much rosemary and thyme, but I like both herbs very much and had no problem at all with it. I left the asparagus whole, b/c I forgot I was supposed to cut them up, but it was fantastic. The potatoes were nice and crispy and the asparagus was wonderfully tender. Thank you for sharing.

Artichoke and Tomato Chicken

I LOVE this recipe! It is going to become part of my regular repitoir. I made some changes b/c I'm trying to eat enitrely organic foods: 1)Instead of the mozzerela, I used feta and 2) I left out the marinara sauce and used the remaining filling to cover the chicken. It was amazing. The feta gave it a wonderful zip. My boyfriend and I made it a part of our date night and we had so much fun with this recipe. I don't think I've ever seen him so happy. Thank you for sharing this recipe!!!
