Mini Mexican Quiches

I'm only rating it 4 stars since I didn't actually taste these. I took these to my church and they were gone before I had a chance to sample them. I did get compliments. It was nice to have a finger food for breakfast that was hearty and not sweet, like all the other things being served.

Spinach and Sun-Dried Tomato Pasta

What a great recipe. Easy, fast, with ingredients I always have at hand. The only ingredient I didn't have were the pine nuts and I don't think I will use them in the future. I didn't think the dish was missing anything without them. I served the pasta with the parmesan-crusted tilapia from this site and my husband gave it a "fantastic" (his highest rating).

Crustless Spinach Quiche

Very yummy and easy to put together! I chunked up some leftover chicken and added it to the mix just to give it a little more substance. Rounded out the meal with some crescent rolls and fruit. Will definitely make again!

Roasted Potatoes with Greens

Very tasty and nutritious. I really enjoyed the combination of potatoes and spinach. I added more spinach since DH and I both like it. This my first time to use fresh rosemary and it added a very nice scent and flavor. I think I would like a bit more garlic. The spices did not overpower the veggies. This made a lovely side dish for the Filet Mignon with Rich Balsamic Glaze on this site.

Parmesan Puffs

These turned out very well. The texture was perfect, soft on the inside and slightly crispy on the outside. I used a whisk to combine the flour with the milk/margarine which combined it well, but had some trouble getting it out of the whisk. Then I took it off the heat and pushed the mixture to the side. Added the eggs to the side of the mixture, whisked them and then mixed it all together. Worked very well. These made a lovely appetizer for our Valentine's Day dinner. Thanks for sharing!

Filet Mignon with Rich Balsamic Glaze

This was quite good. I followed the recipe as written and found it to be wonderfully juicy and the sauce was good. It did not overpower the meat. I served this with Roasted Potatoes with Greens and Simple Feta Salad from this site and the flavors really complemented the other dishes. Used Parmesan Puffs served with marinara sauce as an appetizer and Bananas Foster I for dessert. Made a lovely Valentine's dinner for my darling hubby and me!

Squash Stuffed Chicken Breasts

Loved this! It was easy to make, just took the time to chop up the vegetables. Used seasoned breadcrumbs instead of flour as suggested previously. Also browned the chicken prior to stuffing to make it easier. It came out really really well. Even my picky son loved it which is why it gets 5 stars!

Kielbasa with Peppers and Potatoes

I saved this recipe quite a while back and decided to pull it out and try it tonight. It was very yummy! It really hit the spot on a cold snowy winter night! The only changes I made (out of necessity because I didn't have the called for ingredient) were regular white potatoes (I'm sure the red ones would have made it even better) and green pepper instead of yellow. I also couldn't resist adding some onion. I'm sure I'll be pulling this one out again and again.

Wild River Bloody Mary Mix

Caramel Bars

These are really good and rich! I found the Kraft brand caramel bits, which worked great and used milk instead of cream. I weighed 32 regular caramel squares and found that they weigh 8 ounces. So I used 8 ounces of caramel bits (~1 1/4 cups).

Simple Ranchy Breaded Fish Fillets

This was SOOO GOOD! And very easy and quick to make! The only thing I did differently was to bake it instead of frying. I baked at 400 for 25 minutes. The edges were a little too done so next time I'll only cook it for about 20 minutes. Oh and don't forget to coat your baking dish or it will stick. :) Definitely a keeper!

BUSH'S® Vegetarian Barbecued Squash

This was really very good. I don't think the butter/margarine was necessary ... I didn't taste it and it adds extra calories/fat, so I'll try it without next time, its a good way to get in vegetables, and I think I'll try someone elses suggestions of using non canned baked beans to reduce sodium content. Very good recipe though!
