Snow on the Mountain Green Beans

I halved this recipe for just two. I boiled the beans in chicken bouillon. Be sure not to overcook the beans since you are going to cook them a little in the frying pan. I put 2 T. EVOO in the frying pan along with 2 cloves of minced garlic. I cooked the garlic for a little while and then added the drained beans. I poured a couple of teaspoons of rice vinegar on it along with the sea salt and pepper. I also squeezed a couple of lemon wedges over the bean/garlic mixture. Then after mixing all well I topped with the feta and let sit for about 5 min. until the feta warmed up some. I think next time I'll use a little lemon zest too. This was wonderfu.

Peanut Butter Pie III

A great pie! Made with Kittencal's chocolate crumb crust, with animal cracker crumbs. Used cool whip in place of dream whip. Yummy.

Burrito Pie

Cut the recipe in half, did not have Rotel tomatoes, so used 1/2 can of petite diced; had no chilies, so diced some jarred jalapenoes; did not have 8" tortillas but had 5 burrito sized, so tore them into bite-sized pieces; added taco seasoning packet as suggested by others. Made two layers, plus the bottom cover out of the sauce, which was a bit scarce at the end. DH enjoyed it. I put plain yogurt over my serving, as sour cream sounded like a good addition and that was all I had. Easy and pretty tasty. Thanks for sharing.

Salmon Cakes II

These were very good. I did not use the parsley or cheddar (dh does not care for cheese, imagine!). I also substituted the 10 ritz for the bread crumbs and added an extra egg. Added 2 tablespoons Miracle Whip and 1 tablespoon dill weed and upped the hot sauce. Made 6 patties. Put together early in the day to cook for dinner, so they were in the fridge much longer than the 20 minutes and did not dust with flour until just before cooking.

Grandmother's Oatmeal Cookies

This is the BEST recipe for oatmeal cookies that I've made to date!!! I did roll them in a sugar/cinnamon mix before flattening to bake, my husband ate them up!!! This will be my go to recipe from now on! Thanks for sharing!

Salmon Patties I

Great recipe! I made a few changes, using 1/4 cup bread crumbs and 1/4 cup self-rising flour, then lightly dredged them in flour before browning. Also added garlic salt & chives to the mix as well. The kids loved them, too! Thanks :)

Spicy Black Bean Cakes

Use 2/3 can of refried beans and 1 can of rinsed and mashed black beans, 2 Cups shredded sweet potato, 1 cup of chopped cilantro, 5 cloves minced garlic, 1 sliced and seeded jalapeno, 1/2 tsp. red pepper, 2 tsp. cumin, 2 beaten eggs, and 1/2 cup rolled oats. In skillet with 2 T. EVOO, saute garlic and jalapeno. Add sweet potatoes. Cook for 10 min. on med.-low heat. Remove from heat. Let cool for a few minutes. Add Everything to mashed beans and mix well. Put mixture into refrigerator for at least an hour. Preheat oven to 400 degrees. Pat out into 16-18 patties. Bake 20-25 min. turning over midway. The 1/2 cup sour cream, 1/2 chopped cilantro, 1/2 lime juiced and zested, sauce is really good.

Vanilla - Chocolate Powdered Sugar Frosting

Great frosting with loads of options for different flavors. I used a rum extract instead of vanilla and it was delish. I did need to double it as it wasn't enough for a 2 layer cake.

The Best Rolled Sugar Cookies

These ARE very good cookies, I did add an additional 1/2 c confectioner sugar as one reviewer also did. Next time I will add 3/4 c for a tad more sweetness. I made the recipe and rolled in Saran wrap and chilled overnight to avoid the stickiness other's experienced, I think that IS key with rolled sugar cookies.
