Victoria's Cucumber Salad

Pumpkin Pecan Pie

This makes holidays so much easier! I love Pumpkin pie, my husband loves pecan pie, we decided to try this and it came out great. I used the pre-spiced can of pumpkin and added a few more drops of vanilla. Thanks for sharing it!

Classic Tiramisu

Great recipe! It is identical to the recipe on the package of soft lady fingers. Those packages are actually 3oz not 12oz. I halved the recipe, but still used the recommended amount of coffee liquer. I don't drink alcohol, so I mixed 1/3 C very hot water with 2 tsp instant coffee granules and 1 tsp vanilla. I arranged the lady fingers in the dish, and brushed the coffee mixture on with a pastry brush. They soaked up just the right amount of liquid while still retaining their shape. The tiramisu definitely tastes better the next day. Try to wait if you can :)

Hawaiian Bread I

This bread is outstanding. I beat the egg before I added it, and I smashed the butter before I put it in with the wet ingredients. The mixture was too dry at first, so I added a little bit more milk, a tbl. at a time, until the consistency was right (be careful, though, because it came together before I noticed and I had to add a bit more flour to compensate!). I cooked it on the "basic" bread cycle with a "light" crust. My friends who were over for a Hawaiian-themed dinner found it excellent with the pulled smoked pork we made.

Boilermaker Tailgate Chili

Amish Bread

I have made this recipe several times now, and I have begun receiving requests for it! The texture is perfect; it toasts up lovely, and makes great toads in the hole for breakfast. My bread machine requires some babying in the beginning of the cycle to make sure all of the flour is incorporated, but once you see the texture come together (it will look slightly moist and sticky), it takes care of itself. Fantastic! Thank you!

Kalua Pig in a Slow Cooker

This recipe is amazing. I can't believe the complexity of flavor that comes with only 1.5 tbl of salt and 1 tbl of liquid smoke. I used Hawaiian lava salt and mesquite liquid smoke; both add a fantastic smokiness. I used a 5-6 lb. pork butt roast and cooked it on low for 10 hours in my slow cooker. It just fell apart!

Apple Cinnamon Oatmeal Bread

What a great way to use up all of those packets of oatmeal that no one eats! I love this recipe not only for its simplicity, but also for its flexibility - you could easily substitute different fruit purees (like pumpkin) and different flavors of oatmeal for a new taste. This is a keeper!

Asian Ginger Dressing

Delicious! I used this as a marinade for chicken breasts that I grilled, and basted the chicken with the marinade as it cooked. I didn't have the vinegar, so I tried just 1/4 teaspoon of Hoisin sauce (careful with that, it is very 'rich') and added the zest of one orange. Everyone loved it!

No Bake Peanut Butter Pie

This pie was a big hit. The only thing I did different was to drizzle "Hard Shell" ice cream topping on top before putting it into the freezer. It added just the right amount of chocolate.

Fried Green Tomatoes with Shrimp Remoulade

I live in New Orleans and took this recipe to Grand Isle with me this weekend. I bought shrimp (right off the shrimp boat) and took fresh green tomatoes from my Mom's garden. I made this to go with the boiled crabs we caught early in the morning. Everyone raved over it! And believe me, those Cajuns know good food!
