New Orleans, good ole New Orleans (pronounced New Orlins), the undisputed food capital of the South. In the Big Easy, the heat alone is enough to slow your pace. But when you sit down to a big meal on a hot day, you have no choice but to watch the world go by. People usually think Cajun food when they visit NOLA – New Orleans Louisiana – but are surprised at the international cuisine available. Settled by the Spanish and the French, NOLA is equipped to satisfy any taste bud. From muffuletta sandwiches (which owe a nod to local Italian immigrants), Italian ice cream to gumbo, the world of food is at your finger tips. Other hometown favorites are dirty rice, blackened redfish, Bananas Foster, King Cake, soft-shell crab po'boy sandwiches and the traditional Crescent City breakfast of beignets and chicory-flavored coffee with steamed milk (cafe au lait). Favor an extra splash of heat on your gumbo? Tabasco sauce is made on Avery Island, a bird and nature preserve.

Eclair Cake

This was very good and very easy to make. And it's so simple to make this your own. I used butterscotch pudding, because that's what I was in the mood for, and I used cinnamon graham crackers which I thought tasted amazing in this dish. As per previous reviews, I heated the frosting and poured it on top. Although it didn't taste much like an eclair due to the changes that I made, we still finished it in 2 days!

WEll...I see some nice reviews, but personally did not care for the recipe.I did follow the recipe as it was...maybe some changes need to be made.

Banana Pudding with Meringue

The flavor of this banana pudding recipe is almost perfect, but it's WAY too sweet. The pudding recipe also didn't yield enough pudding to totally coat all the layers of cookies and banana. Next time I make this recipe I will double the pudding recipe without increasing the sugar, because there just wasn't enough of the pudding to make the whole pan delicious and gooey! There was also much too much sugar in the meringue; 1 Tablespoon would have been plenty. If not for the excessive sweetness, this recipe would be exactly like the banana pudding my mom used to make.
