Amazingly Good Eggnog

I was generally satisfied with this recipe. I didn't have any cloves so I just left that out. The only thing that bothered me was that before cooling I poured the wonderfully fragrant mixture into a thermos to bring to Xmas dinner. By the time I got there the next day it had separated into a foamy layer on top and liquid on bottom. A quick stir with a big spoon corrected it and it tasted great. I suppose that is a small price to pay for homemade eggnog without the non-separating chemicals you get with the grocery store brand.

Buttermilk Pancakes II

FLUFFY, LIGHT and HEAVENLY! Buttermilk is the key so don't substitute it! (I can't drink the stuff so I use the leftover for Irish Soda Bread.) You need medium heat and I had to experiment with it the first time. Just remember your stove setting for next time. Cook each side for about two minutes (make a note of the cook time too!). At various times I've tried adding very ripe bananas, or chocolate chips (made a yucky mess), or nutmeg or cinnamon. But to me they are best as is with just a pat of REAL butter and REAL maple syrup. Leftovers can be refrigerated but I've found they can't be brought back to full life (kinda like zombies...they'll only be a reflection of their former glory).

Cheesy Catfish

This is a good, mild flavored catfish. I like to eat healthy but I might try frying it next time...or at least baking it off the surface of the sheet pan so it doesn't get soggy.

Mouse's Macaroni and Cheese

This is one of the best mac and cheese recipes, and I've tried a bunch of them. I've made this several times while adjusting the recipe and I have one word of warning...don't increase the mustard! And I haven't been able to get it really creamy without the velveeta.

Cinnamon Belgian Waffles

You'll never buy frozen waffles again! They're actually better after they've been frozen. Defrost them in the microwave then pop 'em in the toster. Just sprinkle a little powered sugar on top instead of syrup and you won't overpower the waffle. But if you must use syrup, then splurge on "real maple syrup" instead of bottle of fake "pancake syrup".

Cinnamon Ice Cream

Fruit Oatmeal Cookie Bars

This was pretty good. Don't expect them to be like convenient, store bought bars. You have to cut them out of the dish like pie and they will be sticky. But they are tasty!

Key Lime Pie VII

TARTY AND EASY! I was a little suspicious that such a simple recipe could be any good, but this is a very good pie. I used bottled key lime juice to save time, but I made my own graham cracker crust and the finished pie was chilling in about 40 minutes. A little whip cream compliments and cuts the tartness of the lime. Don't neglect the lime zest! Those little green bits floating in the filling are what separates the store bought from the homemade.

Clam Sauce with Linguine

Very simple and very good. Easy to make after a long day at work. It is a little watery so I added a pinch of flour to tighten it up a little bit as it simmered. I think fresh parsley would make it even better. Also, try to use linguini or fetucini even if you have regular spaghetti in the house...it makes you feel more Italian.

Chicken Salad Sandwiches

This is a good, basic chicken salad. I was hoping the olives would add a Mediterranean taste, but I couldn't really find them too much. The relish and mustard were good additions and may have overpowered the olives. I'll probably make this again.

Creme Brulee II

Very good dessert. We made this when I met my girlfriend's parents for the first time. After all, you only get one chance to impress the parents! I think the recipe has been updated based on the reviews because the custard did set for me. Though I did have to increase the cook time by about 15 minutes for a total of about 45 minutes. I didn't have a torch so I used the broiler with only half of the sugar topping. The oven broiler worked well, but be aware that it will also heat up the custard. I may try the torch if I make it again.

Gourmet Mushroom Risotto

My girlfriend and I were initially concerned about making this because risotto has a reputation for being hard to make. But this was really simple and tasted great. Our only substitution was onions for shallots and the combination of sauteed mushrooms and onions was wonderful. The second time, we found real shallots and they were even better! We will be making this again very soon.

Easy Guacamole

Very good and very chunky! Make sure your avacados are not too hard and not too soft. I usually have to wait 2 or 3 days after buying the avacados. If you can't easily mash the avacado meat with a fork then they are not ripe. On the second or third time I made this, I used a can of drained, diced tomatoes instead of fresh tomatoes. Just make sure they are well drained otherwise the water will pool on the bottom of the dish in a few hours.

Belgian Waffles

So worth the extra effort!!! After months of trying to imitate the best waffle I ever had from a street vendor in Holland (at Keukenhof Gardens if you must know), I've settled on this recipe as my base. They freeze very well. Set them on a wire rack for a few minutes after cooking so they dry out a bit. Store them in zip lock bags, but remember to remove as much of the air from the bag as you can. For best results, defrost them in the microwave for a few seconds, then toast them to remove the moisture and crisp up the outside. Then sprinkle with a little powdered sugar. You'll never buy those pathetic little tasteless imitations from the grocery store again! UPDATE...I replaced about 1/2 cup of milk with buttermilk and that gives it a nice tang.

Brick-Oven Pizza (Brooklyn Style)
