Tacos in Pasta Shells

Reviewed: Oct. 29, 2009
This recipe was fair. I was out of taco sauce, so I made the recipe with salsa and I didn't care for it too much. Also, the recipe states to cook the sheels in boiling water for 8-10 minutes, my shells were pretty tough. So next time, I would cook them longer.

Chicken and Corn Chili

Reviewed: Sep. 24, 2009
This recipe was awesome with a little tweaking! (I can never "just follow" a recipe! lol) I did everything this recipe called for, plus I added green chilis, black beans, and chili stewed tomatoes. I also drained all the can goods. I turned the slow cooker off about 30-40 mins. before I served it, so the chili could thicken. We ate this over fritos and dolloped with cheese and sour cream. It was fantastic and my husband just loved it! He asked me to make it for our next supper club dinner! Definitely a keeper! :-)

Taco Pie

I followed the directions, but I even added salsa to the meat while it cooked. I also added a layer of black beans. I think there was way too much sour cream for this dish. I will try this again and revise some, but I will leave out the sour cream and just garnish with it when serving.

I change it up, just a little. Ham with cream cheese and chopped olives; roast beef with cream cheese and dijon mustard...sometimes I add a slice of cheese...they never last

Southern Jambalaya

Reviewed: Aug. 11, 2009
There isn't much to add to this dish. It's spicy & easy to make. The only things I did different were: 1)didn't measure the onions/green peppers 2)used about 1/4 a white onion, 1/2 a red onion, and 3/4 of a large pepper. 3) used a local, southern spicy, packaged sausage 4)used 2 boil-in-bag brown rice, cooked seperately and added with 1 1/2 cups water at the end. 4) excluded the green onion(didn't have) and served. I tip my hat to you. This is the best jambalaya I've had; Beats any restaurant.

Hamburger Soup I

This recipe is very, very delicious!! I'm a southerner, who loves things spicy, so I changed things up a bit. I used 1 can of beef broth instead of boullion cubes, added 1 can of rotel(chunky style), left out the potatoes, used canned veggies, excluded the basil to use own blend of spices, and used noodles instead of rice. I also didn't use lean ground beef and left the fatty grease in the mixture. Made it that much better. I will definitely use this recipe over and over!

Black Magic Cake

Reviewed: Jul. 20, 2009
Absolutely delicious cake! I made it into a Black Forest Cake by adding a large can of cherry pie filling in the center of my 2 layers. I also topped it off by making the fudge icing and dropping a few cherries on top for decoration. I did take the advice of another on here and stuck it in the freezer for 10 minutes so it could handle better. It did not fall apart but the center fell a little. It was nothing the fudge topping could not cover though. The party I made it for raved over it. I will most definitely make this again.

Salsa Chicken

Reviewed: May 14, 2009
Of course, I changed it up to suit what we had...but the basics of this recipe is great. I cubed my chicken and coated with taco seasoning and let sit while I sauted onions, garlic and celery (what I had), added the chicken and 2 cans of black beans. Cooked the chicken for about 15 minutes. Transferred the chicken mixture to a baking dish, added some peppers, poured on the salsa, covered with foil and baked for 20 minutes. Served over brown rice and topped with a little light sour cream and low fat cheese (we are dieting at my house) And just for fun I cut some strips of corn tortillas and fried in a small amount of oil and put on top!!! YUMMIE

Slow Cooker Spaghetti Chicken

Reviewed: Apr. 20, 2009
This is a great and quick recipe. You could probably just cook it on the stovetop and get the same effect. I used some left over grilled chicken breast and I used fettucini noodles instead(because that's all I had on hand) I also added granulated garlic, onion powder, and fresh cracked pepper. It turned out absolutely wonderful for such a quick meal! My 1 1/2 year old asked for more!

This dish was excellent. The only things I did different were I used Dijon mustard instead of prepared(it was all I had and it tasted great!!), I did not add mushrooms because my family does not eat them and I used italian diced tomatoes. YUMMY!! This dish was very much liked and will be used again!!

Spicy Shrimp Creole

Reviewed: Mar. 24, 2009
A little too spicy for me, next time Iwould cut down on the cayenne pepper and hot sauce. I am from Louisiana and I enjoy spicy, but I was looking for a recipe that would compliment the shrimp. In this recipe, I felt, the shrimp was overpowered by the spice.

Amber's Sesame Chicken

Reviewed: Mar. 15, 2009
This dish was great! Although I pulled the lazy route and did not fry the chicken or use any flour. Instead I sauteed the chicken with onion and bell pepper. I did triple the sauce and I added the sauce when the chicken was fully cooked (sesame seeds were in the sauce). I then lowered the heat and cooked on medium low for about 20 minutes, letting the chicken absorb the sauce. I served it over white rice. It was wonderful! Even my picky kids loved it. Defo will cook again!

King Cake

Reviewed: Feb. 24, 2009
I am from Louisiana and now live in the southwest. Today I was homesick for Mardi Gras and ecspecially King Cake. The "cake" part of this recipe was absolutely delicious. As for the glaze, next time I would like it to be a little more thick - it was really runny. I would maybe try less lemon juice or more powdered sugar. As a whole, I would use this recipe again, but try a different frosting for the top. Thanks for curing my homesickness today, Fat Tuesday!
