Jalapeno Chicken II

Reviewed: Apr. 27, 2008
Excellent! We deviated from the instructions a bit- we purchased a FF cream cheese container , jarred sliced jalapenos, & omitted the italian dressing. We pounded out the chicken, and then made a pocket in the middle...spread the creamcheese, placed a few jalaps in it and cut the bacon in half-placing 3 strips across the top. Baked 375 25-30 min. No toothpicks needed. CAME OUT PERFECTLY! So moist and absolutely delicious. It's definitely a keeper.

Banana Pancakes I

Reviewed: Apr. 10, 2008
I chopped up the bananas instead of mashing them, subbed half wheat flour, and added vanilla. Next time I may add some chopped nuts as well. These were very good but only giving it a 4 cause we prefer my father-in-law's.

Famous Butter Chicken

I made nuggets and they came out great, not as crispy as I would like them to have been but great all the same. I did infuse the butter w/ fresh garlic as one person said and I added some extra seasonings (Cajun spices).

Great recipe:) Even my picky kids love it:) I did make some changes; instead of nuts I added 1/4 cup choc chips, 1 tsp vanilla, a little extra peanut butter and it had to be baked for 1 hour and 25 min. Came out moist and YUMMY in the TUMMY to quote my kids:)Thanks this is oour new Banana Bread recipe:)

Peppered Bacon and Tomato Linguine

Reviewed: Feb. 29, 2008
This recipe is wonderful! We doubled the recipe and the only real change we made was to add a can of chicken broth to make more of a sauce. We let the sauce simmer a while and then added the bacon in for about 5 minutes and that was all it needed. The sauce was light with a wonderful smoky flavor from the bacon. Easy and soooo good!!

Herbed Cornish Hens

Reviewed: Feb. 12, 2008
Made these for a family dinner and they came out so beautiful and tasted wonderful. Of course I made a few changes. I only used a dash of thyme, added in a bit of dried rosemary and I put half of a lemon in the cavity of each bird. Also, instead of pouring half of the liquid over the birds in the beginning, instead I basted them every 15 minutes. Birds were golden brown and moist with a wonderful lemony flavor. Everyone enjoyed this very much!

So good! I made minor changes to suit my tastes. I didn't add the tomatoes or garlic (didn't seem like a "breakfast" ingredient to me) and I piled them high on flour tortillas. Great recipe.

My finicky family loved this recipe. Yes, it is bland, so I too improvised. I used mushroom soup and added half a bag of frozen spinach. Also added a teaspoon of seasoned salt and about a cup of shredded, cheddar/monterey jack cheese. Great, easy recipe for personalizing to your family's preference. This one can take almost any variation!

Cajun Crabmeat Au Gratin

I am a Personal Chef and I have made this for a few of my clients and my family. Everyone just fell in love with it. The only change that I made to it was I added some toasted bread crumbs about 3 minutes before I took it out of the over and it added a nice crunch. One of my clients used it as a Holiday Dip for her party and it ran out in the first 30 minutes of the party!!! Hats Off To You for a Job Well Done!!
