House Fried Rice

Reviewed: Sep. 14, 2008
This recipe came out good with some changes to suit our tastes. We used leftover rice as others suggested and it worked well. We doubled the recipe but used 3 eggs instead of just 2. We also added in some cilantro for extra flavor, replaced the peas with bean sprouts and used only shrimp (small ones) for the meat. The rice came out tasty and we liked it better than what we find in the restaurants.

Artichoke & Spinach Dip Restaurant Style

Reviewed: Aug. 31, 2008
When I first saw this recipe, I had a doubt about the Alfredo sauce but wanted to try something different so went with it. What I did different: Peeled and chop the garlic then roasted in in the oven with a little olive oil. After I had assembled the dish, I found it a bit dry so added ½ block cream cheese. I also added a handful of chopped smoked almonds to give it a bit of a crunch. Seasonings – black pepper and Slap Ya Mama Cajun Seasoning. Délicieux!!!

House Fried Rice

Reviewed: Aug. 29, 2008
I am so glad I found this recipe. My family loves fried rice, but I didn't know how to make it. This recipe was so easy. I usually have cooked rice left over, so this worked out wonderfully. Now we don't have to get take out any more.

Szechwan Shrimp

Reviewed: Aug. 21, 2008
I was very disappointed with the results. I made it with chicken and added vegetable and cut down on the red pepper and it was very, very bland. My husband thought we should try it again and let the chicken marinate in the sauce but after eating the leftovers for lunch today, I don't think it's worth making again. It was very simple though.

Hot Bacon Dressing

Reviewed: Aug. 18, 2008
Served this last night over a simple spinach salad and really enjoyed it. I cut the sugar back to 1/2 cup and subbed cider vinegar. I did not add salt since bacon is already salty enough for us. I used a bit of the bacon grease for flavoring and sprinkled the bacon on the salad rather than mixed in the dressing. It was very simple and will use again. May try it with balsamic vinegar next time.

I am only rating the filling, used boxed devil's food cake mix. The filling was delicious! I iced the cupcakes with the Chocolate Fudge Buttercream Frosting recipe from this site. They've been getting rave reviews from everyone!

We loved it!! I doubled the sauce (except for chili paste, kept that the same), used whole-wheat spaghetti, ground ginger (didn't have fresh) and added broccoli, carrots, and water chestnuts. Next time will added some chicken. It was so quick and easy....great weeknight meal. Thanks!

Coconut Ice Cream

Reviewed: Jul. 16, 2008
I made this two nights ago and my only complaint is that it didn't harden enough in the ice cream maker. Put the leftovers in the freezer and last night is was wonderful! Next time I may add a little more cream and milk cause the coconut was a bit strong for us, but that is more of a personal preference than anything. Thanks for the easy, great tasting recipe!

Banana Maple Nut Bread

This is pretty yummy! Well...after I made a few adjustments. I didn't have oil, so I used butter instead. I used regular all purpose flour (all I had in the house). I added some fresh blueberries (almost a cup of them), and used raw sunflower kernels for the nuts. Not the best in the world, but it's yummy enough for me!

Charley's Slow Cooker Mexican Style Meat

Reviewed: Jun. 10, 2008
I was really excited to try this, but disappointed in the results. I made it according to the recipe the first time and all you could taste was the hot sauce (used tabasco, maybe that was the problem). Made it again and cut back on the hot sauce added cumin and some other spices and it is pretty bland. It's pretty easy, but looking for more flavor.

I breaded the chicken and baked it. The only other changes were reduced the amount of red pepper (still a bit spicy for me but the guys loved it) and onion and mushrooms. Very good and very easy. Great quick weeknight meal.

Chicken kabobs came out moist and delicious. Used a locally made ranch dressing and fresh chopped rosemary. Chicken was so tasty! Put some of the marinade on the side and added extra ranch to dip the cooked chicken in....sooo good!

Blueberry Pie

Reviewed: Jun. 8, 2008
This is such a good recipe and it made an outstanding pie! Followed the recipe as written except we mixed the sugar, cinnamon and cornstarch in with the blueberries and added a dash of lemon juice. We used 4 Tablespoons of corn starch but will probably try 5 next time since the pie was still pretty runny. Will also cut down just a tiny bit on the sugar since it was a little too sweet.

Caramel Apple Pork Chops

Reviewed: Jun. 8, 2008
Such a wonderful recipe! Made this pretty much as directed. Sprinkled Tony Chachere's on the chops while cooking. Tripled the sauce ingredients except for apples. Loved having the pecans because they added a nice crunchiness to the dish. Served with whipped sweet potatoes and poured some of the sauce over them. YUMMY!!

Whipped Cream Cream Cheese Frosting

Reviewed: May 25, 2008
Made this last night to top a carrot cake. Only thing I changed was used powdered sugar instead of regular. We loved it! The flavor was great, not too sweet, and the texture was light and fluffy. My husband's only complaint was that it was too fluffy for carrot cake, but will use again. Would be a good cupcake frosting.
