Simple Tuna Spread

WOW!!! This was great and fast!! I needed a fast recipe for a cocktail party and used this one. After I made it I place it in some pastry mini cups and baked them for 12 minutes then added a little cheese on top. Needless to say they were the first to go on the table. Thank you for an awesome recipe!!!!!!

Cream Cheese Sugar Cookies

Great recipe! This time around I decided to make a chocolate version of the cookie, because I wanted a darker look to complement my new folk cutters. I used 8 oz. cream cheese and added 1/2 cup cocoa powder to the recipe. Roll between waxed paper, pop the dough sheets in the fridge overnight and they're ready to go the next day!

Rock Salt Encrusted Prime Rib

Only way to cook a prime rib! My husband’s idea to fix this Christmas Day – wanted something rather than turkey. OH WOW it was fabulous. Seasoned the outside of the prime rib with rosemary, garlic, Cajun seasonings. Next time we will inject some au jus in it. Other thing we did different…put it in at the high temperature of 475 for 30 minutes so the outer layer would sear quickly. After that the temperature went to 325. We also put a layer of rock salt on the bottom and on all sides of the roaster. Just excellent!

Ice Cream Sandwich Desserts

Excellent!! I changed this up a bit...only did 1 layer of ice cream sandwiches which turned out to be plenty. One side topped with Dove Milk Chocolate and the other Carmel. Since this dish was for adults only, I mixed some DiSaronno Amaretti with the Fat Free Cool Whip and covered the entire dish. Talk about good! Finishing touch Ghirardelli white chocolate and Dove dark chocolate shavings on the top.

The Best Rolled Sugar Cookies

Made this weekend for our company's Christmas lunch today...and they were a big hit! This recipe may replace my old standby, the popular "No Fail Sugar Cookie" recipe that is easily found all over the internet. Only change I made was to use more vanilla extract--I used maybe 2 Tablespoons (sounds like a lot, but it makes a huge difference. I make my own extract to save money). I frosted with a crusting buttercream, because I was short on time, but normally I would use the sugar cookie icing made with powdered sugar, milk, and corn syrup (it was way too humid this weekend to attempt that!) Helpful tip for those who are having trouble rolling out the dough: roll out your dough between sheets of parchment or waxed paper right after making the dough, then refrigerate overnight. The next day they are ready to go and easy to cut and move! I found that dividing the dough into thirds for rolling works for my fridge size. Edited to add: I rolled 1/4" thick and cut out 6 dozen "regular" sized cookies (Wilton Christmas set)

Camp Cornbread

I made this recipe, but with some changes. Instead of adding sugar, I added 1/2 c of corn flour and two table spoons of butter. We thought the bread was sweet enough as it was, and I also used lowfat buttermilk instead of regular milk. My husband and I loved it!

World's Best Scones! From Scotland to the Savoy to the U.S.

While these tasted great, they came out completely flat and with the wrong consistency. I'm a good cook and certainly have no problem following a recipe, but these did NOT work well. I wish I had a suggestion for how to improve them, but I really haven't the slightest idea what went wrong.

Sweet Potato Pie VII

This is my first attempt at making homemade sweet potato pie, and in my opinion, this recipe is great. I did, however, alter it a bit. I baked my potatoes instead of boiling them. I didn't have any buttermilk, so I used evaporated milk instead. I used a half a stick of margarine instead of real butter (I don't like real butter), and instead of 1 c. white sugar, I used 1/2 c. white sugar and 1/2 c. brown sugar. Also, I added 1/2 t. cinnamon, 1/4 t. of each of the following : allspice, ginger, cloves, and nutmeg. It came out great, though it could have been a little bit sweeter, so next time I will up the white sugar 1/4 cup. I doubled the recipe, and got 3 pies out of it, though each one could have been just a little bit fuller (I ran out of batter). Even though they were a tiny bit short, they came out just fine. Thank you for this wonderful recipe! No more store bought pies for me! They do not compare to this....

Hot Spiced Cider

Made this after dinner on Thanksgiving and what a treat! Decided to just make this on the stove. We used a plastic type coffee filter we found and filled it with all of the spices. We placed the basket in the pot with the cider and orange wedges. The only change we made was to cut the brown sugar by half. The result was DELICIOUS! It was sweet but not too sweet with just the right amount of spices. We have never had spiced cider before but this will not be the last time!

Spicy Pizza Soup

Delicious soup! Reduced the amount of onions and bell peppers because of personal preferences. Added in some chopped fresh basil for extra flavor. Also added some beef broth to thin out the soup. Soup was delicious and even my picky son ate an entire bowl and asked to have the leftovers the next night.

Gramma's Apple Bread Pudding

Super easy and tastes great! I used week old bread which I let soak up the milk mixture for about 10-15 minutes as per another reviewer. I also subbed walnuts for the raisins and added nutmeg. I did not make the sauce since I took it to work as a morning snack. Everyone loved it!

Clam Sauce with Linguine

This recipe was so delicious! Adjusted the recipe for 10 people and made a few changes. I added in an extra can of chopped clams, a small amount of white wine and a tablespoon of lemon juice. I also threw in some basil and some crab boil seasoning for a bit of extra flavor and heat. The sauce was garlicy and sooo yummy. Thanks for the great recipe!

Black Bean and Salsa Soup

So simple and so good!! I used a smoky salsa which had great flavor and only blended 1/2 the beans and 1/2 the salsa. Added garlic and used chicken stock, just enough to get the consistency I was looking for. My husband said that he would have liked it to be chunkier, so next time I am going to add some diced tomatoes. Very easy to modify to your own taste.

Chicken Florentine Casserole

Excellent. Changes I made since I doubled the recipe: Sautéed garlic and 8 oz fresh mushrooms in olive oil versus butter. Seasoned chicken and cooked on top of stove versus oven. In addition to 1 can condensed cream of mushroom soup (used 98% fat free) – I added 1 can condensed 98% Fat Free Cream of Chicken Soup, Can’t tell the difference at all. Used at least 1 ½ cups half-and-half 2 boxes frozen spinach - thawed 3 pre-baked medium potatoes Used no bacon. Cut up cooked chicken and mixed with spinach. Spread on the bottom of 9 x 13 baking dish. Cut up potatoes and layered on top of chicken/spinach mixture. Covered with special sauce and toped with mozzarella – sprinkled with dried basil. Baked at 350 until hot and bubbly and it came out DELISH
