Cuban Ropa Vieja

This was pretty good. We used a chuck roast and put it in the crockpot all day. We used alot more garlic than was called for and also quite a bit more cumin. Since it was in the crockpot we cut down on some of the broth and we didn't use any tomato paste. Next time I will probably stuff the roast with garlic to infuse the meat with more garlic flavor as it cooks. Good recipe

Loose Meat on a Bun, Restaurant Style

This is an easy and tasty recipe when you have little time and/or energy to cook. The only changes we made was to add some garlic and cajun seasoning to give the meat more flavor. The meat was moist and full of flavor.

Butternut Squash Bake

Wonderful:) I added oregano cause I was out of Thyme. Mashed it like others did and added more blue cheese and breadcrumbs on top and baked for additional 10 min. Everyone raved:) Thanks for this dish.

Thai Pork with Peanut Sauce

Very good! Cooked 3 chops and doubled the sauce as others suggested, glad I did. Think the sauce needed something more, will add garlic and a little kick with some cayenne next time. Also, after cooking the chops will slice them and let simmer in the sauce. Served it over brown rice with some stir fry veggies. Very easy with great results!

Pumpkin Pancakes

I made this over the weekend. They were good, but per other reviewers, I increased the pumpkin to a whole can and still thought the flavor was not quite strong enough (hence the 4 stars). Also increased all the spices and added pumpkin pie spice. Subbed half whole wheat flour and added nuts. My husband didn't want to try them at first, but ate 4!

Banana Waffles

I use this recipe as a starting point. Sub half wheat flour. Add 1/2 to 1 extra banana, smashing 1 and slicing the rest. Add cinnamon, add about 1tbsp on brown sugar, and add nuts. This has become a staple weekend breakfast for us.

Lasagne Verdi al Forno

My husband made this lasagna last night, and I swear, it is the best lasagna I've ever had in my entire life. WOW, the bechemel sauce was awesome. Hubby used Italian sausage instead of ground pork. He doubled the tomato sauces and cheeses in order to make more (family of seven here). And he added fennel and garlic. The herb flavor was outstanding. Hubby comes from a family of Italians, so he wanted to make something authentic. Lemme tell ya...this is as good as it gets!

Sour Cream Chicken Enchiladas

Had high hopes for this recipe but ended up disappointed. My DH was looking for a chicken enchilada recipe that used a green sauce and this one sounded perfect. Loved all the ingredients and followed the recipe with only a few minor changes. But the sauce was clotted coming out of the oven and the taste was just not very good. No one complained but no one finished their serving either. Will try to find another recipe.

Banana Banana Bread

MMMMmmmm Good! I made the following adjustments to make it a bit healthier: 1 extra egg, substitued 1/4 cup of the brown sugar for honey and half of the flour with Whole Wheat Pastry Flour, also added 1 tsp each of nutmeg and cinnamon ('cause I'm a spice nut!) I didn't have any nuts to add, but that would have made it even better. Good staple recipe with room to play with other ingredients.

World's Best Lasagna

Excellent but did omit the sugar, ground beef and fennel seeds. The Italian Sausage had enough fennel. Used hot and mild italian sausage - 2 cans Cento crushed tomatoes. 1 package fresh mushrooms chopped. 2 eggs. 15 oz Ricotta cheese. 5 lasagna noodles versus 6 each layer. 1 ladel pasta water. Lots of parmesan and mozzarella!

Tortilla Rollups II

This is alwasy a hit at a party. Changes I made: Added chopped jalapeno black olives Mozzeralla cheese and sharp cheddar cheese versus plain cheddar to give it a nice cheese bite. ~ 2 green onions (tops only) as they get a bit over powering with the Salsa ingredients. Extra cream cheese and extra salsa. Delish!

Barbeque Beef Casserole

Watermelon and Strawberry Lemonade

Mushroom and Mascarpone Ravioli

I have never had such an experience with a dish. Since I was having 4 couples over for dinner, I decided to “test” the ravioli before I served it. Let me say that the filling was outstanding. I placed one ravioli in a pot per directions (Bring a large pot of lightly salted water to a boil) and within 2-3 minutes it had disintegrated. I was stunned and thought I did something wrong so I tried another – same thing. Honestly, it was comical. I was now in the Ravioli Twilight zone. They were disappearing before my eyes. To save the night, I had to go to plan B – rigatoni with homemade sauce. Success!! Perhaps the ravioli should “not” be placed in boiling water? Puzzled about this one so if anyone wants to shed some light I would very much appreciate it because as I said, the filling was great! Thanks!

Shredded Beef for Tacos

I used a 4lb pork roast, beer instead of wine, one can of Mexican hot tomato sauce, and one can of diced tomatoes. Cooked it on low for 8 hours and it fell apart! Shredded it and let it simmer in the liquid for another 2 hours. Added cilantro and onions right before we ate. It was delicious!

Black Beans and Rice

Made this last night for dinner and it was very, very good plus easy and quick. I subbed chicken stock for the veggie broth and needed to add more for the rice to fully cook. I added the beans and spices when I added the stock so the beans would cook down a little. I didn't add the cayenne but the flavor was still wonderful.

BUSH'S® White Chicken Chili

This recipe was easy and quick. My family enjoyed it, and even our 3 year old devoured his bowl of chili. I added a bag of frozen spinach for a vegetable, a link of turkey sausage for flavor and left out the green chilis. This recipe has become a weekly addition to suppertime at our house.
