Italian Sausage Soup

Reviewed: Nov. 3, 2009
I made this last night and while it was indeed a good soup (love the spinach in it) I just felt that it was missing *something.* My husband agreed. Not sure what though. I will be making it again and playing with the recipe to see if I can make it suit our tastes better.

Slow Cooker Taco Soup

Reviewed: Nov. 3, 2009
The only reason I gave this 4 stars is because it is lacking one very important ingredient. Adding a packet of ranch dressing mix is KEY to making this recipe a sucess! I have been making this soup for about 5 years now. I make it often since everyone likes it (including my picky 4 year old and my husband who isn't "a soup guy"), it's super easy, and I always have the ingredients on hand. I like black beans instead of chili beans but that's just personal preference.

Baked Potato Soup

Absolutely delicious! Only changes I made were to boil potatoes in the broth instead of bake and add extra tablespoon of flour. It was sooo good! Whole family ate it up entirely. Gonna put this one in the rotation.

Banana Cream Pie I

Reviewed: Oct. 7, 2009
This pie turned out great! I loved the flavor of the pastry cream. I made the pie exactly as is using flour but not baking it. I didn't have a single problem with it setting up. I brought it up to a boil, tempered the eggs and then added them in. Then turned the heat off and added the butter and vanilla. I sprinkled my sliced bananas with lemon juice to keep them from browning, and topped it off with sweetened whipped cream. The presentation was very nice and it tasted great!

Dill Pickle Meatloaf

Reviewed: Sep. 24, 2009
I am so glad I found this recipe! My husband really likes meat loaf. I really do not. They are always dry and flavorless. I found this recipe and thought it sounded so odd that I just had to try it. I made it in a muffin pan to cut down the cooking time (30 minutes at 350 was perfect). We all loved it, including the 4 year old! This is definitely going to be making more appearances on our dinner table!

Southwestern Rice

I added 1 lb of ground beef-drained and rinsed. I added everything at the same time as the rice and liquids. It still came out great! This makes great leftovers for lunch!

This was so great! I couldn't find red curry paste so we just used curry powder instead. My husband is a huge fan of thai cooking and he loved it!

Sweet and Sour Sauce I

Reviewed: Aug. 20, 2009
I made a few changes because we are diabetic. I used 1/2 c Splenda and 1/4 c Splenda Brown Sugar Blend, 1/4 c Ketchup, 1/4 c orange juice (that is what I had on hand) 1/4 c water, 1/4 c vinegar, 1/4 c low sodium soy sauce and 2 T flour (didn't have cornstarch). It came out wonderful, however I think pineapple juice would have been better, or maybe a little less orange juice, b/c there was a very definite orange taste. We LOVED this with our Chinese food!

Mushroom Pork Chops

Reviewed: Jul. 30, 2009
This was a great recipe, but I did agree with other reviewer, ...after browning pork chops well in onion and garlic on stove, I baked them, covered in foil 45 minutes...mixed the can of cream of mushroom w/ 1 can of milk and poured that on top....also, instead of salt and pepper, I lightly sprinkled sides of chops before cooking with barbecue seasoning, and added a dash o soy sauce while browning...very good

Good recipe.... added a couple dashes of salt after tasting end result, as well as a tablespoon of brown sugar. I thought this would be a lot better based on reviews...toddlers didn't care for it, nor did husband...sorry that i could not give a more positive rating.

Red Wine Flavored Beef

Reviewed: Apr. 6, 2009
This was very good...first time I used red wine in cooking anything...white, yes...I always used cream of mushroom soup after the roast has started to fall apart. I thought I would try something new since I had red wine on hand, and no mushroom soup. Nice/pleasant surprise. I added the entire pack of onion soup mix. I also browned the roast in a cast iron pot, after stuffing in w/ garlic, salting and peppering it, and adding a bit of worstershire sauce.

Creole Gumbo

Reviewed: Mar. 31, 2009
This recipe was okay...wish I could say more. I wanted to give it a shot, as a switch from the way we normally cook gumbo... But, sorry but still believe the roux is key to a perfect gumbo in our home. For those that have never made a roux or gumbo, please try this method: use equal parts canola or vegetable oil and flour (we use 3/4 cup)... on medium low heat, constantly stir oil and flour in cast iron pot or magnalite pot...NEVER leave it, and NEVER try to rush it... Stir until the roux becomes a color of a penny or mahogany color, and then add your onions (2 chopped yellow) and green pepper, with a teaspoon minced garlic. Also, we don't like the consistancy of chopped celery, so we use whole stalks for flavor. Also, boil your chicken night before, and debone to have ready if you like. We use a whole cut up chicken or whole chicken, drain it and use tbe broth for gumbo. When making the gumbo Do NOT cook the COOKED chicken that long in your gumbo!... as others have said, nor the shrimp! After sauteing your veggies, and adding your broth, then chicken... allow to cook for about 30 minutes on medium low heat...add shrimp (and fresh parsley :) and allow to cook another 30 minutes.

Savory Vegetable Beef Stew

Reviewed: Mar. 31, 2009
This was really very good! I used italian dry seasoning mix / blended w/ the flour instead of cooking it in italian dressing, and browned meat in olive oil. I really liked finding this recipe because only other way i made stews (being from south louisiana), was with a roux to start. This was much easier and just as delicious! Thanks... oh and i added a bit of cumin to the meat as well as worstershire sauce after it was browned, as well as a bit more salt and a teaspoon of dry cajun seasoning, 2 tablespoons parsley to the stew after adding the vegtables.

Grilled Asian Chicken

Unfortunately, I wasn't able to grill but used the sauce to flavor the chicken before cooking it in the wok, with asian veggies. I added a few shakes of chicken boullion granuals and two tablespoons of brown sugar...look forward to basting with it on the grill next time.

Shrimp Scampi Bake

Very good scampi recipe, but I did think that it was a tad bland as some other reviewers. Maybe being from South LA, I am used to more spice/seasonings. I added 1 Table spoon dried Cajun seasoning,as well as a spash of hotsauce.
