Cheesy Chicken Rolls

Reviewed: Jul. 29, 2009
This is a great kid friendly recipe! The secret is to cook the rolls first, then make the sauce on the stove and pour over the rolls just as you are about to serve them. I also added some onion powder, garlic powder, and pepper to the chicken first. This even works great with canned chicken.

I thought this was just average. Maybe it needs more seasoning? I would have given it 2 stars, but my kids ate it so it deserved a third star.

This turned out great. I left out the red peppers because nobody in my family eats it. Nice flavor!

Quite a tasty meatloaf. I sprinkle with a little parmesan before baking for a little extra flavor. Also good with cheddar instead of the mozzarella.

I've never been a fan of sloppy joes, until I tried this recipe. Very tasty and it doesn't have an overpowering tomato taste like the canned stuff. My kids like it too!

Mexican Lasagna II

yummy! I made it exactly as the recipe was written, except I didn't have any Roma tomatoes, so I used canned petite diced tomatoes. I found that you only need to bake it for about 15-20 minutes. Very good taste and very kid friendly.

Double Peanut Butter Cookies I

Reviewed: Jul. 28, 2009
Wonderful! "Creamy" is not usually an adjective I use for cookies, but that is what they were. Especially the next day. I fully intended to make them exactly according to the recipe, but I ran short of peanut butter. I had enough for the dough but not enough to spread between layers. So I just mixed the chocolate chips into the dough and put the dough on the pan by spoonfull, and they were terrific. I had natural peanut butter (no added ingredients like sugar) and they still turned out great.

To Die For Blueberry Muffins

Reviewed: Jul. 8, 2009
yum yum yum! These are great! I wanted more so I doubled the recipe, but 1 recipe of crumb topping was enough for all. I filled the muffin cups to the top and it made 12 giant muffins (6 per recipe). I would imagine it will make 8 for a single recipe if you don't quite fill the cups all the way. I wouldn't change any ingredient. YUM!

Whole Wheat Banana Strawberry Loaf

Reviewed: Jul. 4, 2009
This recipe is wonderful!! My husband is hard to please and keeps raving about it. I made it late last night and we had it for breakfast this morning. I made it EXACTLY according to the recipe and wouldn't change a thing. My loaf pan must have been smaller than the one others used because some of the batter boiled over and I had to slip a metal pan under my glass loaf pan to catch it. I cooked it for the full time and it was brown on the top but it was a delicious crust that tasted buttery even though there was no butter in the recipe. I usually have to cook recipes about 20 minutes longer than the recipes called for though so maybe this one was just right for my oven. I've had the same issue with the last 3 ovens I've owned, so maybe it's our climate. Anyway, I would recommend not changing a thing but make sure your loaf pan isn't more than 2/3 full to avoid any spilling over. THIS WAS DELICIOUS!!

Chocolate Mousse

Reviewed: Jun. 29, 2009
My sister had her wisdom teeth removed Friday so I found this recipe while looking for something soft to make her to eat in addition to the mashed potatoes I had made. This was a HIT! She loved it and asked me for the recipe so she could send her husband to the store to buy the ingredients to make it again. I tasted it also and it was great! So simple too! One tip - double or triple the recipe. 1 recipe makes 2 small servings. 2 recipes makes 2 large servings. When I make it for my family of 4, I'll probably triple the recipe to give everyone enough to have 1 serving.

Lucky and Rippy's Favorite Dog Food

Reviewed: Jun. 11, 2009
I saw many reviewers worried about their children... or animals ha ha, not receiving the proper nutrition or being on a fixed income. After reading the nutritionist's (Kim)review I was hesitant and almost didn't recall the recipe description also says, "combined with a kibble" as well as the recipe was for people worried about dog food recall. This recipe is a low cost and decent substitution. Also, mixing this with his regular food has made food last twice as long. My dog has severe skin allergies and he hasn't broke out with this food! Not recommended for a good regular diet as Kim stated, but if you need cheap and temporary food, good choice. :)
