Authentic, No Shortcuts, Louisiana Red Beans and Rice

Reviewed: Jul. 22, 2008
I live in Louisiana and have never attempted to make red beans..this recipe tasted so good and just like all the red bean recipes here in Louisiana! Next time I would cut the water back to 9 cups, it was a little thin but the next day it thickened up. I also would not cook te sausage ahead of time and just put in the crock pot and it will cook up in there. I added just a little cajun seasoning for an extra kick! Thanks for the great recipe I will be making for years to come!

Marinade for Chicken

Reviewed: Jul. 7, 2008
Wow! What a great recipe! I marinated the chicken for about four hours and it was so tender and flavorful. Everyone was asking for the recipe. I think it will be even better with steak and can't wait to try that. Definitely going in my "keeper binder!"

Black Bean and Salsa Soup

Reviewed: Jun. 25, 2008
This is an awesome soup! I did add a shake or two of Tocasco sauce, juice from about 1/4 lime, and about 1/4 tsp dried cilantro. I left half of the beans whole like other reviewers suggested. It makes an awesome soup and is a great side for a panini sandwich.

Blueberry Coffee Cake I

Reviewed: Jun. 15, 2008
This is a 5-star recipe only with the modifications recommended by the other reviewers. Even with increasing the milk to 3/4 cup, it's still hard to spread the second half of the batter over the blueberries. And it doesn't make sense to put a streusel topping (and goodness - not this much!) on something you bake in a Bundt pan, because you invert it before serving, and the topping would end up all over the plate. So if you bake it in a springform pan, increase the milk to at least 3/4 cup, and put half of the streusel in the middle with the blueberries, it's a good coffee cake. I also increased the cinnamon in the topping to about 1 T. and increased the vanilla to 1T.

Bread Pudding with Whiskey Sauce III

Reviewed: Jun. 4, 2008
Mmmm!!! This was great! I followed the suggestion of turning up the oven to 350 degrees, and I took it out after 50 minutes. It still looked very wet, and I was worried that it wouldn't be done, but it was perfect after it sat a few minutes. I also increased the cinnamon to 1 tablespoon - personal preference. I think I found the trick to the sauce. Instead of just heating it until it was blended, I tried to get the sugar to dissolve so it would be clear. It never was clear, but it was a little bubbly. Then when I added the rum (didn't have whiskey), the sauce bubbled a lot. I think it burned off the alcohol, so it had a great rum flavor instead of too alcohol-y. It also got thicker as it cooled. Make sure you use great liquor - I used Appleton Estate V/X rum (highly recommended by reviewers of another recipe) that I bought especially for making a rum sauce. It was WONDERFUL! Half the sauce recipe unless you want to use it for something else. Also, since you add the rum at the end, start with half and add more if you like it.

Spicy Filet Mignon

Reviewed: May 2, 2008
I know I am going against the popular vote, but I did not like the flavor of these. I am very experimental with my food and love trying new and different things, but I felt the flavor did not mesh with the meat. I am glad I tried it, but I won' be making it again.

Round Steak and Gravy II

Reviewed: Mar. 12, 2008
Excellent, fast AND easy!! Doesn't take much effort to make this taste like fine restaurant cuisne!! Good call on using dry French Onion soup mix--worked out well w/out the additional cup of water (didn't need to add any flour). Go easy on adding salt; you really don't need to. And try adding a can of your favorite canned mushrooms to the gravy mix. You, family and guests are going to LOVE this recipe!!!

Pratice up with the sauce--getting it just right for your tastes...and don't be shy about adding your favorite enhancements to it. When you get the sauce just right, pour it on the chops or chicken and bake away!! You'll get a five-star restaurant tasting dish every time.

These were great. I also used all butter (no shortening) and increased the cinnamon slightly. I used all white whole wheat flour (from King Arthur), and they were great. They took 10 minutes on the convection setting in my oven.

Tasty Green Beans

Reviewed: Feb. 4, 2008
First try: Tasted good. Stick w/ whole cut beans (avoid French cut ones). Adding 1 8oz can cut mushrooms was a nice touch. I cut down soy sauce (used low sodium) and still came out tasting a bit salty. I'll try Worchestire sauce next round. This recipe model does have several good dress up options. A good Chinese/Asian side dish to compliment main dish of same.

Spinach-Stuffed Pork Roast

Reviewed: Jan. 20, 2008
I also butterflied the pork and rolled it up, and I liked the way that looked and distributed the stuffing. I loved how moist the pork came out, and it really was simple once it was assembled. I didn't like the taste of the stuffing, though. (And I like spinach.) Maybe it would be better with fresh spinach? I'll look for another recipe for stuffing and use the temp and time from this one.

Italian Peas

Reviewed: Dec. 14, 2007
This is an awesome recipe. When I went to cook dinner, the only vegetables I had were peas and my husband hates peas. I found this recipe and he really liked them! I didn't have chicken stock, so I used beef broth. I also cooked it in an iron skillet, which I think also added to the taste. Definitely going in my "keeper" binder!
