Roasted Chicken Noodle Soup

Reviewed: Jan. 27, 2009
Very good soup. Just a little thick. Might want to add some extra milk along with another dash or two of salt, especially when re-heating leftovers. Very good soup, though!

Angel Hair Pasta with Shrimp and Basil

Reviewed: Jan. 12, 2009
As written, this recipe is 4 stars. I doubled the pasta (to 1 lb.) and the shrimp (to 2 lbs.) and halved the tomatoes (to one 28-oz. can) and added a little salt, and it was really good! (Even my shrimp-hater liked it!) I think that with about 1/2 cup of cream it would be even better! Make sure you have PLENTY of fresh Parmesan, too (not the powdered stuff) to really make it special. Also, don't add the shrimp in the middle and then remove them and put them back. Just put them in at the end and cook for 3-4 minutes.

Quick Creamy Potato Soup

Reviewed: Jan. 11, 2009
Excellent tasting soup-deserves the 5 stars! I got this down to a science, where cooking time is a sweet snap. I chop up the potatoes, enough water to cover and cook them while I'm cooking the bacon AND fresh chopped onions! I also have standing by the open cream of chicken soup cans, milk, dill weed and a cup and so shredded cheddar cheese. I'm convinced area ALTITUDE is the key to the watery soup concern. I'm in New Orleans area-and I didn't have to drain my potatoes. I threw in a cup and so of shredded cheddar cheese-and still had to add a dash more milk to slightly thin the soup. Great soup idea for a cold winter's day!!

Marinated Pork Loin

Reviewed: Jan. 1, 2009
First time making this and got the restaurant quality taste!! With no ketchup on hand, I successfully subbed with a can of fine quality tomato paste and made two batches of marinade per directions. One batch marinated meat; the other, I added chopped onions and put in seperate bag; set both in fridge for 24 hours. With oven at 375, I non-stick sprayed roasting pan, placed meat in and discarded meat marinade. Every 30 minutes, I'd check meat temperature and used second marinade batch to generously baste meat till done. The result? Great tasting pork, complimented with a tangy, spicy sauce that drew 5-star comments from the fam!!

Rich and Creamy Tomato Basil Soup

Reviewed: Dec. 1, 2008
Oh. My. Goodness. This soup is to die for! Whenever I make it, I have to hand out the recipe left and right. It is kind of hard to understand how much basil to use exactly because the leaves are all different sizes. If you puree it separately with a little tomato juice, you can add it to taste separately.

This is an awesome potato soup! I am not normally a big fan of potato soup, but i have to say, this one is awesome and very easy. It is a great way to use leftover baked potatoes that I used to throw out.

Cola Onion Pork Chops

Reviewed: Oct. 14, 2008
Fast, easy: The fam and I all LOVE this recipe!! I added freshly minced onions (just enough to lend flavor body)--and WOW!! I had restaurant quality chops! I found this recipe model works with chicken, too--and I'm even thinking of trying it with steak as a possible marinade.

Quick and Easy Alfredo Sauce

Reviewed: Oct. 14, 2008
EXCELLENT!! I tweaked and used heavy cream instead of milk. First time--and I got the Olive Garden recipe right...and became the family hero!! Same taste second time I finely diced red and green peppers, which worked very well and gave the alfredo a Christmas holiday appearance!! There's NO left-overs when I make this in my home!!

Korean BBQ Chicken Marinade

Reviewed: Oct. 14, 2008
Nice, albeit watery. Doubled recipe for 6 large boned chicken breasts, poured marinade over chicken and placed in 350 degree oven till meat was 180 degrees. I can see adding minced onion and a tad cornstarch--and making this a yummy BBQ glaze for chicken and/or steak....maybe thowing in some large pineapple slices for a Polynesian flair!! Worth making: do try this one!!

Pineapple Angel Food Cake II

Reviewed: Sep. 23, 2008
This was so good and unbelievably easy! To the previous reviewer who asked, you do not mix the cake according to the directions on the box. Only use the three ingredients included in this recipe-dry cake mix, pineapple (do not drain!), and vanilla. It is scrumptious and was a great hit!

Cinnamon Streusel Orange Muffins

Reviewed: Aug. 19, 2008
These were WONDERFUL! I'd rate them 4 1/2 stars as is, but that's not an option, so they're 5 stars anyway. I added 1 t. orange extract with the vanilla, and I think I'd even add another t. of the orange. And I think I might have accidentally used 1 t. of baking powder instead of 2, which made them an absolutely WONDERFUL texture. (We're at high altitude, so we're supposed to reduce leavening, so this may not be a good idea at sea level.)

This recipe tasted like good ole country cooking! Don't over cook the cube steak when frying or it will be chewey. The ony complaint is that it did not produce much milk gravy, but I think I would add more milk next time..overall good dish.
