One Dish Bourbon Chicken

Reviewed: Jun. 28, 2009
First try per directions: Something went wrong!! NO BOURBON FLAVOR!! I let the browned garlic/onions soak in the bourbon/chicken stock mix while browning the chicken. Perhaps the olive oil blocked out the bourbon; allowing it to evaporate while cooking?? I dunno. I'll look at some other suggestions, try this again--and hopefully solve the mystery and give this recipe a better star rating.

Bourbon Chicken

Triple the sauce amounts and pay attention to taste; add or reduce certain ingredients to get exactly what you want. Try this several times, using different whiskey brands: You might be surprised to find lesser known brands do far better than popular ones. It wasn't just "Fridays" at my house--it was the whole sweet fun weekend on just one family dinner night at my house!!

Creamy Pesto Shrimp

Reviewed: Apr. 22, 2009
As written, this recipe must have been FANTASMIC!!! I had 2 lbs shrimp, pesto, and pasta, so I used this as my basis and used about 2-3T butter, about 1/2 c. evaporated milk, a little garlic, and the rest of the pesto (about 1/2 c.). I thickened it with about 1 T. of cornstarch and added the remaining Parmesan (almost a cup). It was great. Thanks a lot! This was just the type of recipe I was looking for, and my adaptation was great!

Absolutely Fabulous Greek/House Dressing

Reviewed: Apr. 13, 2009
This was very good! Surprisingly, it really does stay mixed (at least through dinner) when it's made in the blender. Use it on sub sandwiches (ham & Swiss, pastrami & provolone, etc.)like our local pizza place does!

Pork Chops with Tangy Honey Sauce

Reviewed: Apr. 9, 2009
1st try at this recipe: I strictly followed instructions--and didn't find anything "tangy" or "honey" about this dish. When I think "tangy", the word "sweet" comes to mind--and I don't find much "sweet" in apple cider vinegar. Perhaps a good sub for apple cider vinegar might be needed; I suspect there's volume misbalances between it and the soy sauce--maybe even the ginger too, for that matter. I'm not ruling this one out; ingredient experimentation with this recipe will be done and I'll hopefully promote more stars with this dish soon.

Whole Wheat Beer Bread

Reviewed: Mar. 31, 2009
Very good, and even had good texture the next day - not crumbly and dry like whole wheat bread often is. I highly recommend using a honey brown-type beer to give it a really good flavor.

Honey Barbecued Spare Ribs

Reviewed: Mar. 17, 2009
These were very good, and easy to make with ingredients I keep on hand (other than the ribs, of course). They were a nice change from traditional BBQ flavor. I'd give them a 4 1/2 if I could (but I can't).

Bananas Foster II

Reviewed: Mar. 17, 2009
This was FANTASTIC, and SO quick and EASY! We didn't use the walnuts, as we aren't nut people and I don't think they're usually in bananas foster, but otherwise this recipe is great, and so elegant for guests, too! Use good quality darker rum like Appleton Estate, not silver/white rum, for the best flavor. And I think we increased the cinnamon to our taste.

Sweet Restaurant Slaw

Reviewed: Mar. 17, 2009
This one won, hands down! My sworn coleslaw-hating children even gave it a thumbs up, and my barely-8-yr-old made it all by herself! It did get a little runny after 2 hours, but that's probably because the sugar that made it so good brought out all of the water. How does that chicken place get around that? (Maybe it was b/c of using light mayo.) GREAT recipe!

Grilled Peanut Chicken

Reviewed: Mar. 6, 2009
Strictly following recipe instructions gives this dish a restaurant quality taste: two thumbs up for Chandra6!! Don't let not owning a grill stop you from making this tasty dish!! Make the sauce and simmer it on stovetop for about 30 minutes; adding just enough soy, garlic or water to get that right taste / texture. Make enough to baste chicken, pour over fetticiune noodles AND spare some for dipping. If you are out of curry--try "atom smashing" some red pepper flakes in the food processor and use enough for your tastes. Definitely am going to try crunchy peanut butter the NEXT time I make this dish!!

Family didn't praise this dish much--but they didn't complain about it. Following exact recipe instructions, the oregano / Italian seasoning flavors came out, but I had a sauce quantity issue;doubling the tomatoes my next try fix things-and promote this rated dish to 4 stars.

Great muffins! Make sure, as always, that your bananas are OVERripe. I used half white whole wheat flour and half unbleached, and they were great.

Banana Pudding IV

Reviewed: Feb. 9, 2009
Wow! Great, and I'm not usually a huge fan of banana pudding. The cream cheese made it really nice and custard-y. I used half of the condensed milk (and don't make the mistake of using evaporated milk), and it was great! In a 9x13 pan, the second half of the cool whip barely covered it, so if you like that stuff you might use the 12-oz tub.

Three Cheese Garlic Scalloped Potatoes

Reviewed: Feb. 7, 2009
For some reason, my potatoes would not get soft, even though I baked them for even an hour longer than the recipe called for. I don't know what happened, but I was very disappointed because I had to throw the entire dish away with all those wonderful cheeses. I am sure it is a good recipe and I just did something wrong, but I am scared to try again.

Aunt Teen's Creamy Chocolate Fudge

This was really good fudge. I made it at Christmas time for gifts and everyone loved it. I like the fact that it is a darker chocolate fudge since I absolutely LOVE dark chocolate and am not a big milk chocolate person.

French Breakfast Muffins

Reviewed: Feb. 7, 2009
These muffins were awesome! I made them in the mini muffin papers and they were so adorable. Plus, the smaller size allowed more the the sugary-crispy topping per bite than a large muffin. It was a perfect recipe for using things I already had around the house without needing a special trip to the store.

Herb-Crusted Chuck Roast

Reviewed: Feb. 2, 2009
1st time: 3 stars. Mistakes I made: Used a deep roasting pan instead of more shallow glass baking pan. Subbed Marjoram and rosemary for savory. Also used Italian bread crumbs. Although I measured per recipe, I likely didn't add enough of what I used to begin with, so improvements on that are noted. This dish just didn't wake up anyone's taste buds with way I made it. I intend to try again next time using glass baking dish and subbing savory with thyme IF I can't get savory. I'll also add more of recipe ingredients, noting meat weight and note details when I update this rating; hopefully I'll add more stars to this recipe.
