J.P.'s Big Daddy Biscuits

Reviewed: Nov. 28, 2009
VERY good! We used butter instead of the shortening. I do recommend brushing them with melted salted butter right after taking them out of the oven, and maybe just before baking, too.

Fantastic Black Bean Chili

Reviewed: Nov. 25, 2009
i had to change this recipe after it was finished cooking to make it something my family would like. i added about 2 cups frozen corn, 1 can rotel tomatoes, and a large can of tomato sauce. family liked it with these changes and also served with cornbread.

Navy Bean Soup I

Reviewed: Nov. 16, 2009
My kids (most of whom are decidedly against beans) liked this!! I only made 1/2 a lb of beans because we usually have a lot left over, and it lasts for weeks. My son had three servings, and some of us ended up a little hungry! Good stuff!

Broccoli Crawfish Cheese Soup

Reviewed: Nov. 14, 2009
absolutly delicious. when we boil crawfish we add mushrooms to the mix and they really soak up the great flavors. so i had a bag of frozen crawfish tails and these mushrooms that i used for the soup. besides the addition of the mushrooms i made this exactly as stated and i would not change a thing.

Cajun Pasta Fresca

Reviewed: Nov. 11, 2009
This is an ok dish. i made exactly as written, fresh tomatoes and all. as is i would not make again but if i did decide to make again the main thing i would leave out is the mozzarella. it seemed odd in this dish. i think it may have been added into the recipe as a thickener, but it really messes up the consistency of this simple pasta dish.

I can't beleive i am just know getting around to reveiwing these brownies. I have been making these for over a year now and have never had any problems or complaints with these. these are the absolute best brownies out there. restaurant quality, dark rich chocolate taste. i make without the frosting and like to serve with blue bell homemade vanilla icecream. thanks again celeste for this recipe.

A Good Easy Garlic Chicken

Reviewed: Nov. 9, 2009
Wow! This was great! Usually when I saute chicken I get dry and rubbery, but this really DID come out very moist and tender (and quickly)! For the reviewer who said to use fresh onion and garlic to make the seasoned salt the only salt in the recipe, it IS! Garlic powder and onion powder don't have salt in them. I might cut down a little on the seasoned salt next time, especially if I use prepared chicken broth after I saute it. Homemade (non-salted) broth would be great, and then I added cornstarch and mushrooms and made a sauce. GREAT!

Spinach Stuffed Chicken Breast

Reviewed: Nov. 8, 2009
no matter what other reveiwers may say you have to try this recipe. it is really good. i followed the ingredients to the t. the only change to preparing the recipe is i sauteed the spinach in a little butter wih the garlic until it wilted. i think a key to this dish for flavor is make sure you use a good quality bacon. my personal favorite is wright brand applewood smoked. it is thick and full of flavor and meat. not all fat. i cooked it down just until some of the fat started melting away and edges started turning before wrapping the chicken. besides that, stuck it in the oven and cooked for directed amount of time. no dry chicken here.

Cabbage Beef Soup

Reviewed: Nov. 7, 2009
this is cooking now and tastes like a yummy vegetable soup. i did add a can of mexican style stewed tomatoes to serve as a filler. aslo a little more cumin and cayenne to suit my tastes. nice easy recipe. thanks update: forgot to mention i halfed this recipe and it made a ton. also decided to cook up some elbow macaroni and add. even though i precooked the noodles they wound up absorbing a lot of the liquid so i added a little more tomato sauce and half a can of bef broth. came out great.

Jimmy's Mexican Pizza

great recipe. i skipped the pie pan and first poked holes in tortillas so they would not puff and toasted them in the oven to crisp up. then made pizza's and baked on cookie sheet until cheese melted. added a little cilantro also to toppings. reheated very well the next day. next time i will add more of the bean and meat mixture.
