Pennsylvania Coal Region Barbecue

I've never been a fan of sloppy joes, until I tried this recipe. Very tasty and it doesn't have an overpowering tomato taste like the canned stuff. My kids like it too!

Mexican Lasagna II

yummy! I made it exactly as the recipe was written, except I didn't have any Roma tomatoes, so I used canned petite diced tomatoes. I found that you only need to bake it for about 15-20 minutes. Very good taste and very kid friendly.

Quick and Easy Brownies

I made 2 batches of this recipe...the first I made with only 1 cup of flour as per suggestions from others and the second I made following the original recipe. I liked both but prefer the more "fudgy" recipe using less flour. The original recipe is great but tastes like a chocolate cake...which I will start using as my new chocolate cake recipe!

Double Peanut Butter Cookies I

Wonderful! "Creamy" is not usually an adjective I use for cookies, but that is what they were. Especially the next day. I fully intended to make them exactly according to the recipe, but I ran short of peanut butter. I had enough for the dough but not enough to spread between layers. So I just mixed the chocolate chips into the dough and put the dough on the pan by spoonfull, and they were terrific. I had natural peanut butter (no added ingredients like sugar) and they still turned out great.

Pizza Dough I

I teach a foods class to high school students. This recipe is by far the easiest for ADD/ADHD infested classrooms. I have my students freeze it overnight, then I remove them the next morning and let them rest in the fridge for another 12-24 hours. It is much easier to roll out and use. I also instruct my students that want a "crispy crust" to put the raw dough on a piece of foil with oil brushed on it(to prevent sticking to the foil) and bake for 5-10 min. or until it is just turning brown. They then remove the crust, apply toppings and place back in oven directly on rack with the foil on the rack below. The crust is much better when done the "crispy" way.

Coconut Rice

This was heavenly. I have made this several times as a side to Asian dishes. I haden't worked much with coconut milk, remember to shake the can wildly before opening it. Also, SunnyByrd (one of my favorite cooks) is correct about this recipe, you need to adjust the liquid/rice ratio, after that is done, it will be great!

Rosemary Turkey Meatloaf

This is definitely a keeper. I decided to make this and had begun to do so, all the while forgetting my oven was out. Watching countless episodes of Rachael Ray, I realized that I could pat the meat mixture into 7 patties and pan-fried in some canola until deep golden brown. Remembering the mushy comments I read from others, (although I now think this is due to the fact that a loaf pan is meant for bread and not a meatloaf, I never put a meatloaf into a loaf pan, I always pat it into the shape I want and roast it on a foil lined sheet pan) I rolled the patties in add'l breadcrumbs and this helped them stay together in the pan. I added the sauce to the pan after I was sure there wasn't too much oil left in the pan and poured in the sauce with a little water and let it reduce. I do think the sauce could benefit from a splash of worchestshire since the sugar in the sauce and the sweet of the balsamic in the meat needed alittle something to counterbalance. Overall I saved this recipe and will forward to friends.
