Chewy Chocolate Chip Oatmeal Cookies

Reviewed: May 19, 2008
Yummy cookie! I used half shortening, half butter (unsalted), half whole wheat flour, and regular oats. I also decreased the salt to 1/2 t. and used raisins instead of nuts. Hubby raved about them.

Yum! Yum! I got tons of compliments on this one. Only thing I need to say is use regular biscuits, not grand biscuits...they will have too much dough for your cups!

Sarge's EZ Pulled Pork BBQ

My family thought I got dinner from our favorite BBQ restaurant!! Soo easy and sooo good! I did not use the beef broth. I only used the coffee and a bottle of Head Country BBQ sauce...set on low for 8 hours. Yum!!

Peanut Butter Vegetable Chicken Soup

Reviewed: May 9, 2008
Very good recipe! I didn't use broccoli or celery and I added a couple teaspoons of red curry paste. We loved the peanut flavor in the soup. Next time I'll up the amounts of carrots, potatoes and chicken...the soup was a little too much broth. But good recipe. Thanks!

Slow-Cooker Chicken Tortilla Soup

Reviewed: Apr. 26, 2008
This was pretty good...but I did make some adjustments. I added a can of black beans and used homemade enchilada sauce (Red Enchilada Sauce from this site). I cooked the chicken in the soup (great idea, everyone!) which worked out great...but I wish there had been more chicken for the amount of broth. I added a few ounces of cubed Velveeta in the last 30 minutes, and instead of the tortillas, we just ate it with Cheddar cheese and tortilla chips. I'll make again, just using at least 5 chicken breasts.

Resurrection Rolls

I used 2 crescent rolls per marshmallow. These were sticky, gooey, sweet, flaky, and positively delicious! My husband thought I was crazy (but held his tongue) when he saw what I was doing, but he loved the end result. Definitely a Easter tradition in the making!

Yum yum yum! I used half applesauce/half oil, half whole wheat flour, and sprinkled walnuts on top (easy to pick off for the no-nut-eaters). It was delicious and gobbled up by my kids. Best way to eat sweet potatoes that I've found yet!

Glazed Pork Chop

Reviewed: Apr. 6, 2008
OMG! I don't think I have EVER had pork chops that I LOVED sooo much!! I only made small alterations to the recipe- I used spicy brown mustard and splenda brown sugar blend. I also added a chopped shallot. I browned the chops in an oven proof skillet and baked them for 30 minutes at 350. Then I added made extra sauce and thickened it in the pan. I will make this over and over again! Thanks so much for sharing such a phenomanol recipe!! :D

Apple Crisp I

This was pretty good! I made a few subsitutions- I did not have all of those apples on hand so I used some pears. I also used margarine and Splenda brown sugar mix, weight control quaker oatmeal and sugar free syrup. It turned out wonderfully! My hubby liked it as well, so I will be makingthis again for sure :) Thanks!!

The Old Boy's Strawberry Pie

Reviewed: Mar. 24, 2008
Yum Yum Yum! I love this pie! It's easy and wonderful with ice cream! I did discard the excess flour/sugar mixture after tossing the halved strawberries. I think next time I"ll use less flour and make sure the sugar stays with the strawberries, my pie was a little tart. My hubby, who doesn't care for pies and was convinced he wouldn't like it, went back for seconds! Thanks for the post!

Grandma's Green Bean Casserole

Reviewed: Mar. 24, 2008
I think this is a really good recipe. I made it as directed, except I cooked the onions in the butter before adding the flour. I ended up using a little milk to thin it out a tad and used probably 1 1/2 cups cheese. And definitely more crackers, 1/2 cup was not enough to cover the top. It was well received by everyone and tasty....but I honestly think I prefer the traditional recipe with cream of mushroom and fried onions. Good variation, though!

Spicy Sausage and Rice Casserole

Reviewed: Feb. 3, 2008
This is really good. My kids weren't crazy about it, but hey, they're picky about anything with peppers or onions in it. I used 16 oz turkey sausage and brown rice and cooked it on the stovetop. I did use a little more liquid also. Oh, only 1/2 teaspoon each of pepper and cayenne. It was spicy enough for me. Hubby and I liked it a lot.

Apple Crisp II

Reviewed: Jan. 14, 2008
Simply divine! I did follow others' suggestion to double the crumb part and put half on bottom. I used 7 large Granny Smith apples and tossed them with the sugar and cinnamon (with 1/4 t. nutmeg added) mixture to coat well. I also used about 1/4 cup apple juice instead of water. I got lots of compliments and will definitely make again! Thanks!
