Crunch Bar

Well, I LOVE this recipe. I did have to make some changes in the proportions though, which is why I didn't rate it 5 stars. It takes at least 1.5 sleeves (6+ oz) of saltines to fill up that pan size. Definitely use foil and spray it liberally with non-stick spray. To get the appropriate coverage, you HAVE to use 1.5 cups butter and 1.5 cups brown sugar. I've tried it with less, and you end up with crackers with very little toffee on them. I used a whole bag of semi-sweet chocolate chips and probably 1/2 cup milk chocolate chips, and also found that a little over a cup of finely chopped nuts was perfect. I can't imagine using more. So yes, I changed the proportions on everything....and the end result is perfection, in my mind.

Mexican Shepherd's Pie

Very tasty. I added some green pepper, a can of drained black beans, used chili diced tomatoes, frozen corn, and homemade cornbread. Easy and delicious. Thanks!

Country Green Beans

Absolutely LOVED these! I added one more clove of garlic and took the advice of others and used chicken broth. I also omitted the ham simply because i didn't have any on hand. Hubby said they were the best green beans he has ever had! Will make again!

Day Before Mashed Potatoes

These were sooo yummy! I took the advice of others and didn't make them the day before. Also i added a layer of shredded cheddar cheese the last 10 minutes of baking. I think these would also be good without baking them because i tasted them before i put them in and i didn't want to stop eating them! I will definitley make these again!

French Bread

This is a really good bread, and very easy. I didn't use a bread machine....just mixed the dough and let it rise for 40 minutes before shaping into loaves. I used 1 cup whole wheat flour with the white. I loved the suggestions about the ice cubes in the oven.....worked great! The bread was gobbled up by my family. Thanks!

Great recipe! I did not use the pimentos or peas. I added cheddar cheese to the mixture...it tasted great! I also drizzled butter over ritz crackers for the topping...yum, yum! My picky family loved it!

Country Chicken Casserole

I changed it up a bit...I did not add the corn. I added another can of cream of chicken soup. I also added more hash browns...about 5 cups. It was good, but my family did not go crazy about it...however, this recipe is perfect for a quick and easy meal.

Cinnamon Rolls III

I had high hopes for these but was disappointed. They were dry and not very flavorful....needed more sugar and cinnamon inside. I did use a different frosting, but the dough just wasn't my favorite. I much prefer the Clone of a Cinnabon recipe. But thanks for the post.

Pink Fluff

Many thanks to the reviewer who recommended pureeing the cottage cheese! I never would have made this without that idea. I left out the pie filling and added a large can of mandarin oranges. I used strawberry jello. It was delicious...very well received. Definitely the best way I've ever eaten cottage cheese! Thanks!

Burrito Pie

So good...I followed a reviewer's advice to layer the tortillas 2 to 3 at a time for each layer...so delicious! I baked half and put the other half in the freezer. This recipe makes a lot!

Chicken Enchiladas I

These were pretty good although like the other reviewers have commented, they are pretty runny when rolling them up in tortillas...not good when the sauce is hot! I won't use the tomato sauce next time and I will reduce the water to 1/4 cup.

Simple AND good! My husband really liked these...I didn't tell him what they were named...I just called them BBQ cups or something! This recipe is great for a quick meal. It's easier to put the dough in each muffin tin, let it rest for a few minutes, and then shape it...this will save some time and not be so frustrating!

Layered Chicken and Black Bean Enchilada Casserole

This is SO good. I had to modify based on what I had in the house. I used 1.5 lbs chicken, cooked with chili powder, cumin, garlic salt, and onion powder. Added the black beans, a 7 oz can green chiles, 1 cup frozen corn, dried cilantro, and 4 oz. sour cream to chicken mixture. Used 6 whole wheat tortillas (baked at 450 for 5 min.). Used 1 cup homemade enchilada sauce with about 1/4 cup medium salsa added (all I had on hand). Hubby raved....said it was fantastic...I agree!

Peanut Butter Cup Cookies

This is seriously one of the best cookie recipes ever. My husband and I could NOT stop eating them. They freeze beautifully and don't take long to thaw. Definitely freeze the peanut butter cups before sticking them in the hot cookies. Thanks for the fantastic recipe....and for the extra couple of pounds on my hips.

Pizza Casserole

Big hit with my family. I used whole wheat penne and made my own pizza sauce. Used turkey pepperoni cut up. Next time I might try it with bacon and/or sausage, and I'll definitely up the amount of cheese. Thanks for the good recipe!

Salmon Patties I

Very tasty and easy. I used 2 eggs, no juice from can (and definitely picked out the bones and skin....bleh), and used dried minced onion, garlic and onion powders, dried parsley, paprika, and salt and pepper, since I had plain bread crumbs. Delicious. I'll definitely make again.
