White Bean Chicken Chili

Very good. I just cooked frozen chicken breasts in with everything else in the crockpot. Used a can of salsa verde instead of tomatillos. Delicious with some lime corn chips!

So so good. I didn't exactly let the chocolate mixture cool to room temperature...didn't have the time for that...and everything still turned out great. Awesome with a buttercream frosting.

Buttercream Frosting

Reviewed: Mar. 17, 2009
Very delicious! I cut the recipe in half and frosted 2 9" round cakes. Just the right amount of frosting. I used cream instead of milk cause I had it on hand. A little extra fat never hurt anything! I also added a dash of salt to balance the sweetness a little. Great basic frosting!

Fried Rice with Cilantro

Reviewed: Feb. 5, 2009
Delicious! I sort of tripled the recipe....this is what I did. I used 1.5 lbs of chicken breasts, diced and cooked with 5 cloves of garlic, 1 jalepeno pepper, and a large handful of finely diced baby carrots. Removed the chicken from pan, increased heat, and added in 7 cups of cooked brown rice (for the health factor...started out with 2 cups raw). Made a well in center and scrambled 2 eggs in it. Poured mixture of sauce (3 T. sugar, 3 T. fish sauce, 3 T. soy sauce, 1 t. sesame oil) and stirred to combine. Added the chicken back, along with a generous sprinkling of dried basil and cilantro (couldn't find fresh). Added in a handful of chopped green onions. Whole family liked it except picky 3 year old who wouldn't even taste it. I'm looking forward to the leftovers tomorrow! Thanks for the great recipe!

Awesome and sooo easy! I used about 2 tablespoons of worcestershire sauce instead of just 1/4 tsp....not near enough! I also used a little bit of cayenne pepper...gives it some heat! This is a quick and easy meal that your family will love!

Fabulous recipe, very easy. My husband and the boys love their pork chops and tenderloins, so I need different recipes! I grilled the pork chops on my George Foreman, scraped some of the pork chop bits and put in the sauce along with the cream and blue cheese and butter....wow, so good...

Kay's Spaghetti and Lasagna Sauce

Reviewed: Jan. 20, 2009
Yum Yum Yum! I only used one onion, half a large green pepper, and 4 cloves of garlic. Used a 28 oz can of crushed tomatoes and a 14 oz can of Italian diced tomatoes. Ended up using a Tablespoon of Kosher salt and probably a teaspoon of pepper, and 1 teaspoon of oregano. Left the basil as directed. Also added a healthy dash of worcestershire sauce and a finely diced yellow squash. Simmered for a couple of hours, stirring occasionally. Was absolutely delicious!

No Roll Pie Crust I

Reviewed: Dec. 7, 2008
I made this crust exactly as written, except using canola oil instead of peanut. Maybe that would make a huge difference, but I don't know why it would. My crust was tough, oily, and not worth eating. I won't use an oil recipe again. The health benefits are just not worth spoiling your pie over.

Crunch Bar

Reviewed: Dec. 7, 2008
Well, I LOVE this recipe. I did have to make some changes in the proportions though, which is why I didn't rate it 5 stars. It takes at least 1.5 sleeves (6+ oz) of saltines to fill up that pan size. Definitely use foil and spray it liberally with non-stick spray. To get the appropriate coverage, you HAVE to use 1.5 cups butter and 1.5 cups brown sugar. I've tried it with less, and you end up with crackers with very little toffee on them. I used a whole bag of semi-sweet chocolate chips and probably 1/2 cup milk chocolate chips, and also found that a little over a cup of finely chopped nuts was perfect. I can't imagine using more. So yes, I changed the proportions on everything....and the end result is perfection, in my mind.

Day Before Mashed Potatoes

Reviewed: Nov. 29, 2008
These were sooo yummy! I took the advice of others and didn't make them the day before. Also i added a layer of shredded cheddar cheese the last 10 minutes of baking. I think these would also be good without baking them because i tasted them before i put them in and i didn't want to stop eating them! I will definitley make these again!
