Amish Breakfast Casserole

This was truly fantastic! I made it for my in-laws' visit at Christmas, so I needed something quick, tasty and presentable. I used leftover bacon that I just chopped up and then sauteed with the onion (and added garlic). I was really afraid of the cottage cheese because we aren't big fans of it plain but decided to go for it. You can't tell it is there but the flavor is amazing, so don't leave it out! I also added chili powder and really liked the "pop" it gave. My cheese preference was half Cheddar and half Colby Jack, with some Parmesan just for fun. Also, for lack of time, I used pre-shredded potatoes (found in the egg section). I made this the night before and cooked it in the morning, which added about 15 minutes to the cook time. Super versatile, easy to prep, can make ahead and tasty!

Peanut Butter Bars I

So easy, so elegant. The texture looks a bit odd when you just have the peanut butter in the pan, but don't worry. Cool the PB or else it may mix together. I marbled in some white chocolate, too, just to elevate it a little - it looked very pretty.

Chocolate Chip Butter Cookies

Interesting recipe - it's very quick and simple and really should be called a shortbread. This is a great one to "dress up" for the holidays - dip in almond bark, drizzle something on it, throw on some sprinkles, and it is quite a chic little cookie!

Spicy Sweet Potato and Coconut Soup

Spinach Lentil Soup

Excellent soup!! Threw the rice in with the lentils and only used half the spinach because that is all I had left. Added a pinch of cumin as that is a preference for us. Husband ate two big bowls and said he had a new favorite soup! Will make again. Love recipes with lentils. THANKS for submitting!

BLT Pasta Salad

Very good and easy recipe! Took it to our Christmas potluck at work and there wasn't a bit of it left. I used the prepackaged real bacon bits to save time and green onions and light ranch dressing to help save some calories. Pretty good stuff!

Chocolate Truffle Cheesecake

I thought this was good, but it wasn't something that made me think, "Wow!" Also, it wasn't my favorite cheesecake texture. Perhaps, it was my cooking skills or lack there of. I did like how simple the ingredient list was and how easy it was to prepare. That bumped it up to 4 stars. :)

Brussels Sprouts Gratin

WOW ... 5 stars for a Brussel Sprouts recipe? Great dish. I prepared this for guests last night. I didn't know how they felt about B/S's so I prepared another vegetable side dish as well ... the Sprouts were GONE ..... everyone really complimented the flavor. As is typical I followed the recipe for my first time making it ... no sense in rating a recipe that you've changed!!! The only things I will do differently next time are: 1) skip the butter on top 2) put the bacon pieces on top, not mixed in 3) broil for about 3 minutes at the end. Try this recipe!!!

Rachael's Superheated Cajun Boiled Peanuts

I had only tried boiled peanuts one time and decided to give these a shot. They turned out really good and were simple to throw together. The wait was hard but good things come to those that wait right? These ended up with just the right amount of spice and salt. Thanks for the great recipe!

Soda Cracker Cookies

These were really good! Super easy too make, I had no trouble with my toffee setting up. Make sure that you start timing from when it reaches a full rolling boil, not just a simmer. I think that is key. These get bonus points for simplicity.

Boudreaux's Zydeco Stomp Gumbo

I scaled the recipe down to 6 servings and added just a bit more broth and seasoning so that I could add the rice to the pot instead of serving the gumbo over the rice. This was an excellent recipe! I was looking for a gumbo with no oakra and minimal tomato for hubbys sake and this was PERFECT! Easy too!!

Cherry Rum Balls

My husband and 8 year old loved these. I'm not much of a hard liquor fan in my desserts so the rum was a little overpowering for me. Be prepared for some messiness...my son loved it though! I used maraschino cherries, because they are juicier. Will probably make again, just with less rum!

Gravy Baked Pork Chops

Perfect for the husband and picky-eater son! I added one teaspoon of minced garlic to the gravy mixture. Love this recipe..so quick and easy to make for busy families. Mashed potatoes are a must for all of the extra gravy!

Baked Dijon Salmon

This was a change from the dill sauce I've always used.. It was delicious, salmon was flaky and moist. BUT I prefer a dill sauce and I prepared a Spring Salad also.

Chicken and Artichoke Minestrone

The only thing I did different was add some basil and oregano as another reviewer suggested and I definitely think it needed it. All in all is was very tasty and I will make again. This soup made the house smell fabulous while it was cooking.

Oh my gosh, these were to die for. I have already ate like 4 of them and still need to make room for dinner. The only thing I did different was use butter flavored shortening and towards the end switched to my hubby's favorite chocolate, dove. Thanks for a great recipe. Followed to a tee.
