First off ya have to like gizzards. I do. This is good. My son home from college ate half of it watching football. A very good halftime snack.

Chicken Pot Pie III

Reviewed: Jul. 13, 2008
You will love this for substitution. Had a pound of steamed shrimp in the fridge (go figure). Cream of mushroom and cream of brochli, can of VegAll. Only used half the cream of broch as it was pungent. Added tarragon, garlic. Oh yea no pie crusts. Had a pkg of cresent rolls. Rolled those out sticking them together. Actually covered the bottom and top. It was great.

Blueberry-Sausage Breakfast Cake

So so so good. Made this for work and EVERYONE loved it! So many people requested the recipe that I just posted it on the bulletin board. Made it the night before & cooked it at 375 for 30 minutes then turned it down to 350 for another 15 minutes. Perfect! Didn't change a thing.

Penne with Chicken and Asparagus

This was a good starter, but it needed quite a bit of tweaking. I make a similar dish with zucchini & mushrooms, doused with a healthy helping of pesto mixed in. It adds a wonderful flavor.

So good. I've made it twice now & had rave reviews. It's the crust that sets these apart. Extremely rich, so cut them into tiny squares!

Pretty good marinade and very easy to make. However, it's not my favorite on all recipes.

Apricot-Glazed Green Beans

Reviewed: Jun. 10, 2008
I thought this recipe was just okay, but my husband really liked it. I used sugar free apricot preserves (sweetened with splenda). I thought it had too much sauce and tasted a bit too buttery.

Blue Cheese, Bacon and Pear Brunch Sandwiches

Reviewed: Jun. 5, 2008
They made a similar sandwich like this one at the deli where I used to work. However, it was made with the addition of homemade blue cheese mayo and smoked turkey. It was one of our most popular specials and so delicious!

Easy Oatmeal Muffins

Great base recipe. Like everyone else, I made modifications. I added 2 1/2 tbsp of brown sugar, cinnamon, fresh nutmeg to the dry ingredients. I added 1/4 tsp of vanilla to the wet mixture. I also added raisins to the final mixture. Turned out great!

Slow Cooked Corned Beef for Sandwiches

I was expecting this to knock my socks off, and it just didn't. Pretty typical taste & it certainly wasn't falling apart after 10 hours in the crock pot. I followed the recipe exactly. It was good but didn't deserve such rave reviews.

White Chocolate Gorp

Reviewed: May 26, 2008
Made it with Crispix instead of Chex, omitted the chocolate candy and opted for craisins instead. I used the stick pretzels, but it made it difficult to eat, especially since everything sticks together like glue. Next time I will use pretzel knots, and be sure to double the amount of these. It makes for a delicious salty-to-sweet ratio. Took it to work and the whole batch was gone by noon!

Ronaldo's Beef Carnitas

Reviewed: May 26, 2008
This was okay. Doubled the spices, put it in the crock pot for 10 hours on low. Needed an extra zing or more flavor. The meat tasted like it would be a delicious filling for tamales, but for soft tacos, I'd definitely add something for extra kick. Probably will not make again.

Slow Cooker Lemon Garlic Chicken II

Reviewed: May 1, 2008
Like other reviewers, I had to add more liquid. I used chicken broth instead of water and bouillon. I also added cooking white wine for a little zing and some whole garlic cloves to the crock pot. Pretty good for something fast and easy! Served over rice with a side of veggies.

Cinnamon Mini-Muffins

Reviewed: Apr. 16, 2008
Like many people have posted, it's a good base recipe. I add fresh nutmeg, cinnamon, and vanilla. I also substituted vanilla soy milk for half of the milk. It would be good with currents or raisins. I think a tad more sugar would be good too. It's gonna be great with a small pad of butter.

Cinnamon-Curry Tuna Salad

Reviewed: Apr. 16, 2008
Edible but not great. I added more mayo to calm down the OVERWHELMING spice. (And I like spicy food.) If I ever make it again, I'll use half the cinnamon. I might add more relish too. I'd rather use a different curry/tuna recipe.

We're tofu lovers and this was tasty. Like many others, I doubled the sauce. The sauce did burn a bit. Next time I think I'll cook at a lower heat.
