Tuna Noodle Casserole from Scratch

Reviewed: Mar. 30, 2009
REALLY good. Perfect for the traditional recipe, but we, too, tweaked it a bit for more flavor which is the ONLY reason I 4-starred instead of 5. (But we're Salt-ies). The recipe is great for that, just taste everything right before you pop in the oven. For us, we added another can tuna, a healthy sprinkling of chicken bouillon granules, a touch more salt, pepper, and dried dill then gave a good stir and baked. My casseroles w/cheese and breadcrumb topping I always do this: heat the butter and breadcrumbs in the microwave, mix well then toss in the cheese w/your fingers to coat well. Broil at the end for crunchiness. ANOTHER NOTE - we didn't use 2 pans. Start everything in a big skillet, then after really getting the veggies tender, I added the flour - stirring to coat everything well - then the additional butter, smoothing the mixture as it melts. Then gradually whisk in your milk. Add noodles, veggies, then fold in tuna. ONE PAN!

Monte Cristo Sandwich - the Real One

Reviewed: Mar. 30, 2009
This recipe has replaced my own personal concoction. Now even my husband, who once thought this sandwich was "weird", loves when these are for dinner. We live very rural, so we use raspberry jam, heated, for the dipping sauce most of the time.

Mom's Gourmet Grilled Cheese Sandwich

Reviewed: Mar. 30, 2009
This is surprisingly INCREDIBLE for how simple the ingredients. The second time we made these we ended up mixing the parm with the butter (less messy) and adding some garlic powder. My husband WOLFED these down. Perfect accompaniment to deli-style tomato soup.

Roasted Rack of Lamb

WOW. We flipped! Loving lamb, this was just over-the-top for us. We served on Valentine's w/a beefy red wine and mint reduction and we almost couldn't stand the flavor. In a good way. The crust is DIVINE.

Food Processor Chocolate Whipped Cream Frosting

Reviewed: Mar. 30, 2009
We thought this was incredible. Has an almost chocolate ice-cream flavor to it with the fluffy cream and the cocoa. We assumed this needed to be refrigerated (recipe may have said it, don't remember), but that added to the "ice cream cake" sort of feel. First chocolate cake we were all fighting to polish off in a long time! Thanks for the simple, wonderful recipe.

Lavender Tea Bread

Reviewed: Mar. 18, 2009
I'm giving this 4 stars because the batter is fantastic, but I think I prefer it without the lavender. I guess I'm just not a lavender person. I used 1 tbsp of dry, which I think is just a tad too much. It gets a bit of perfume taste to it. I should have added just a tad more flour because it was a bit crumbly.

Rum Cranberry Applesauce Bundt Cake

Reviewed: Feb. 21, 2009
I think soaking the cranberries in rum would eliminate the dry texture of the cake. The glaze is super good but almost needed to be doubled. It wasn't bad right out of the oven, but the next day, it was super dry. I think the cranberries sucked all the moisture right out.

Spicy Beef Curry Stew for the Slow Cooker

Reviewed: Feb. 15, 2009
This was good. BUT...it definitely needs spicing up. I'm pretty good at "doctoring" my recipes, and this was one of them. The heat was just right, but I added almost twice the curry, garlic salt and lots of pepper. Served it over rice.

I was not impressed. It lacked depth? I'm not sure, but I followed the recipe. It needs more spice or something. Don't think it will be a repeat.

Cheesecake Cookie Cups

Reviewed: Feb. 13, 2009
What's not to like? Per other reviewers, I used sugar cookie dough. Just bought the roll, sliced a cookie and placed it in the cup. Doubled the recipe but only ended up using one cookie roll. Placed a sliced strawberry on top and then drizzled milk chocolate over that. Perfect presentation. They taste wonderful, although next time I will go for more filling versus cookie.

Chicken Enchiladas with Creamy Green Chile Sauce

Reviewed: Feb. 12, 2009
Still unsure about this. The onion in the filling gave a sweet taste, which I didn't like. However, the sauce was a bit redeeming. Sprinkled black olives and jalapenos on top after baking, along with the green onion. I think it has potential but the filling needs more.

Venison-Bacon White Chili

Reviewed: Feb. 8, 2009
I used the spices in this recipe as a guideline for my own venison chili. I didn't follow the ingredient list, but I felt I needed to comment anyway because it was fantastic. I cut the cinnamon and nutmeg in half but followed the remaining spices exactly. I'm definitely going to keep this recipe!

Chow Mein Noodle Casserole

Reviewed: Feb. 2, 2009
A house guest requested this recipe since his mom used to make it when he was a kid. It was different, not something I would normally make. I added mushrooms and water chestnuts, used garlic almonds that you find in the salad section. I also added plenty of garlic salt and pepper. Both of my children loved it, good comfort food.

The Best Doggy Biscuits!

Reviewed: Jan. 31, 2009
This is an incredibly easy and inexpensive way to make dog treats. My pup, Lucy, has IBS so we have to be very careful about the ingredients we feed her. As you can imagine, it makes buying treats challenging. This is a great substitute for the organic pricey treats. Like others, I substituted low sodium chicken broth for the water, and I skipped the salt since the broth still had plenty of it.

Barbeque Pork Two Ways

Reviewed: Jan. 24, 2009
I loved this! I always make beef bbq, but this was so good. I like the fact that the sauce isn't a thick one, just more of a flavoring. Very delicious and makes A TON. We've made about 12 sandwiches out of it and are still going!
