Pumpkin Gingerbread

So so so delicious! Like other reviewers, I doubled my spices (except the cloves) and baked at 325 for 70 minutes. Turned out perfect!

Raspberry Vinaigrette Dressing

This is wonderful. The only reason we gave it 4 instead of 5 stars is, for our tastes it would have been very sweet. We listened to other reviewers and cut the sugar in HALF. After tasting, we felt it was missing some depth, so we added 1/2 t of aged balsamic. Added a little smokiness and the depth we were seeking. Very good recipe.

Seafood Sandwich

This being my first seafood roll experience, I thought it was pretty good. I added the minced celery and additional Old Bay as well, and a healthy dash of white pepper. I thought it a bit mayo-y, but I would think Miracle Whip would be even sweeter/tangier, so I definitely won't sub that. Maybe subbing a little sour cream for the mayo or just cutting back a bit might work for us. But I've got to give it a 4 star for the simplicity and convenience! Green leaf lettuce a must!

Hawaiian Banana Nut Bread

Don't get me wrong: this is delicious! BUT, (there's always a but!) I couldn't really taste the cherries/pineapple. I left out the coconut, but I like the idea of the coconut cream addition as another reviewer suggested. It just tasted like a good banana bread w/a slightly different texture. Oh, and this is VERY sweet (this coming from a person that likes her coffee a syrup-y consistency). I will cut down on the sugar next time.

Chicken and Spinach Ravioli

This was really great. I think its unfair all the reviews stating this recipe is not worth all the work. ALL homemade ravioli is time consuming, and this recipe's filling is delicious. We were being run out of the garden with so much basil, so we topped this with a pesto cream and it was INCREDIBLE. The filling was so good, I used the leftovers (with a little ricotta mixed in) for lasagna roll-ups a couple days later. Thanks for a really good recipe.

'So This Is What Heaven Tastes Like!' Cream Cheese Bars

These were not "bars" at all. The 3 eggs made this very dense and cakey. I was expecting more of a cheesecake flavor, but the cream cheese is hardly noticeable. The texture was heavy and thick. They also took 45 minutes to cook and was still a little raw in the middle when I removed it from the oven. I was disappointed and ended up throwing most of it away.

Buttercream Icing

I wish I could do 4 1/2 stars because that's more fitting! I found that I only needed 3 cups of sugar. I also used a bit of Wilton's butter flavoring and gel food coloring. Fantastic!

I usually purchase the Krusteaz waffle mix, but this was almost an identical replica. Great waffles! I use a round single-waffle iron, and I was able to make 6 waffles.

Sour Cream Chicken and Stuffing

This recipe is a really good base recipe. We made changes for our family's taste, but it really turns out well. I usually bake my casseroles at 375 for that little bit of extra crispness and a perfectly browned top. We ended up baking this almost a full hour, still, at that temperature to get a nice casserole-y, not soup-y, consistency. We cut our breasts in half, patted dry, seasoned lightly and then pan seared in oil (just to get a nice brown outside and better flavor). Like many reviewers, I reduced the amount of curry (using just a sprinkle) because we're not huge fans unless we're eating a curry - just tastes too Indian. This really does turn out great. Served w/steamed broccoli and a light cheese sauce.

Apple and Pumpkin Dessert

Awesome? No. But still a pretty good way to satisfy your sweet tooth while being healthy and using up that leftover pumpkin from the holidays. I'll probably make it again and might add a tsp of brown sugar.

Banana Oatmeal Cookies

Okay, so I always despise when people completely change the recipe & then review it, but ... here I go. I subbed one cup of butter, subbed walnuts for the chocolate chips, added cranberries and orange extract. Too yummy! Has a fluffy, cake-like texture and is different from the ordinary. Oh, and I know there's quite a few banana oatmeal cookie recipes, but I chose this one because it used quick-cooking oats. The spices were perfect ... go ahead and try it!

Tuna Noodle Casserole from Scratch

REALLY good. Perfect for the traditional recipe, but we, too, tweaked it a bit for more flavor which is the ONLY reason I 4-starred instead of 5. (But we're Salt-ies). The recipe is great for that, just taste everything right before you pop in the oven. For us, we added another can tuna, a healthy sprinkling of chicken bouillon granules, a touch more salt, pepper, and dried dill then gave a good stir and baked. My casseroles w/cheese and breadcrumb topping I always do this: heat the butter and breadcrumbs in the microwave, mix well then toss in the cheese w/your fingers to coat well. Broil at the end for crunchiness. ANOTHER NOTE - we didn't use 2 pans. Start everything in a big skillet, then after really getting the veggies tender, I added the flour - stirring to coat everything well - then the additional butter, smoothing the mixture as it melts. Then gradually whisk in your milk. Add noodles, veggies, then fold in tuna. ONE PAN!

Monte Cristo Sandwich - the Real One

This recipe has replaced my own personal concoction. Now even my husband, who once thought this sandwich was "weird", loves when these are for dinner. We live very rural, so we use raspberry jam, heated, for the dipping sauce most of the time.

Mom's Gourmet Grilled Cheese Sandwich

This is surprisingly INCREDIBLE for how simple the ingredients. The second time we made these we ended up mixing the parm with the butter (less messy) and adding some garlic powder. My husband WOLFED these down. Perfect accompaniment to deli-style tomato soup.
